When I think of quesadillas, I’m reminded of that unhealthy garbage I used to eat in a past life. Not anymore! These quesadillas are plant-based, healthy, and even salt, oil, and sugar free! Not only that, but they’re pretty easy too. We did two different quesadillas for this video: a “breakfast” quesadilla with an omelette-style chickpea filling, and a “dinner” quesadilla with a sweet potato and black bean filling. Both were delicious!

OMG. You have cracked the code. Seems simple but I could never do perfectly baked sweet potatoes at home. I have the same Breville Oven and tonight we had beautiful organic sweet potatoes, baked to perfection, thanks to you guys.

I never thought of trying the chickpea batter as a quesadilla - I've only tried it omelet-style. The corn tortillas would give it a nice crunch :)

After this ended, I went back to the cheese sauce recipes, made a bunch, and ate it in that concocted bean, and pico, thing, but also added air-dried tater chunks. Dang, that was good, thinking about doing it again, today.

How do you eliminate the tortilla and make the almond flour mix like pancakes and put some salsa on top.
My husband grew up in Mexico and refuses to eat healthy versions of the food he ate growing up but at least I can make this for myself 🥲
Things happen with our health that motivate us to change our minds on that. Over time he will may find the motivation too.

I have been using chickpea flour for a year now after we bought a 25 lb bag! These would be good as waffles.
