If you add a short teaspoon of protein powder (egg white or milk), it'll help keep the bubbles in the batter. Can also add a pinch of baking powder so it create a bit more bubbles during the cooking.

This is a great recipe, I recommend not mixing the batter too much or blending it since then it would be runny and wouldn't be fluffy

It will burn although the you put it on the lowest flame if the Pan is thin ! You have to use the thickest pan .
