"Handmade" Fluffy Souffle Pancakes! (without baking powder)

- 💖Hello everyone! Today, I made meringue for the Souffle Pancakes without handmixer! and only use my hand!
This post is made for the request of previous video's comment.
It was easier than I thought! So you can do well and easily just like me!
* Please be prepare the clean bowl.
* Egg white need to stay cold when you use it.
🥞Ingredients
- Soft flour 37g or 4Tbsp
- 2 Eggs
- Sugar 26g or 6Tsp
- Milk 20g or 4Tsp
- Vanilla extract(Optional, for removing egg smell)
- Lemon juice 1/4 tsp(for stable and milky-white meringue)

Just tried this tonight, here are some points I have learned (hard lesson?)
First, whipping by hand is surprisingly not that hard! Just in the way stated in the video, guess the lemon juice helped a lot?
Second, please make sure not to overwhip the egg white. Once the egg white can have a peak on your whisk and the peak would not swirl around if you shake the whisk lightly (probably egg white have turned a bit more glossy and you can feel a little bit of resistance in it while whisking) then it is done. Overdoing it will make the whole thing collapse or go watery :(
Third! IMPORTANT! Make sure the pot is not too hot! First several ones I made suffered ‘black faces’ because of that. Guess the correct temperature should be in the level which the little bit of water in the pot to help steam the pancake would only bubble (not vigorously bubbling or even turning into steam real quick). Consistent low heat makes the trick? Also, if the pancake’s bottom gets solid, good time to flip it then. A not-golden is better than burnt?
Overall, the flavour and fluffiness is satisfying (even though first several got burnt a bit).
Would definitely experiment more on this recipe! Hope this can be of help to anyone who would like to give this a go.

1. Make meringue hard enough (not too hard) with lemon juice.
2. Mix meringue and yolk batter gently using a spatula. (don't whisk too much)

I made this and it turned out really well! Followed the recipe and it works just like the video. I think I slightly over mixed the batter, it could have been a tad higher but I think the next time it will be just perfect. Very easy to make, and delicious.
Bekah Haught what did you add to the pan first ? I’m confused because in the video it looks like she added water....i’ve seen others adding oil or butter
@@zeinabb_e3653 you use a thin layer of oil before you fry. But you also add water after adding the dough. It helps it rise..

Do you add oil or butter on the pan or just water ? + i love your channel so much 🥺🖤
I've seen another video where the person adds oil to the pan but wipes it off with a paper towel so it leaves like a thin layer. I'm sure you could also replace it with butter. The water is moisture I think? You're supposed to like dribble it there
I read somewhere that it's best to use oil and not butter... something about pancakes getting dry, can't remember exactly dunno if this works for these fluffy pancakes tho since that was for normal ones
P.S. I have tried making japanese fluffy pancakes (sadly they deflated but good thing they taste amazing) it's best to use a little amount of oil, you can brush it on your pan or use tissues and have pancakes cook on low flame at all time. Also I saw that the water should not touch the pancakes (this is from another video)

저 손머랭으로 하려다가 팔 아파서 중간에 포기했어요 ㅋㅋㅋ ( 집에 휘핑기가 있지만 굳이 손 머랭으로 하는 센스~~ ㅋㅋ)갈색설탕도 되나요....? 제가 해봤는데 잘 안되서요~ 두툼하지가 않고 그냥 팬케이크보다 조금더 올라간 기분,, ㅠㅠ 이 똥손 ㅎ
저ㅜ갈색설탕했는데 성공했어요 손머랭은 ㅋㅋ힘들어서 쿠팡에 싼휘핑기 샀는데도... 언제까지해야해 ㅋㅋ이랬음 레몬은없어서 유자넣었음요
갈색설탕 잘 안된대요. 되게 하려면 진짜 오래 해야한다더라고요.
