So sayers of Jesus feeding bread and fish? I love bread and mackerel or salmon (sans) the biblical implication... In any case...this be way back in the time machine healthy bread. @@pf5658 Flaxseed is a very good source of omega 3 oil ALA. This is the most volatile of all oils. Meaning it is quicky ruined by being subjected to heat.light or oxygen. If you crush a flaxseed at room temperature it is spoiled in less than 2 hours. And spoiled oils are some of the worst cancer causers we consume. Also a major contributor to heart disease. White flour acts as sugar once it is ingested and does lots of damage to the body.....which is one of many reasons why Westerners suffer from so many countless health maladies that other peoples don't suffer from....) "Whole grains" do have nutritional value......however the nutritional value and health properties of whole grains are on the 'lowest end' and very diminutive compared to other plant foods with nutritional value. Case in point: Vegetables are about an 8/10 (overall) in terms of their nutritional value and health benefits. Fruits about a 6/10. Beans/peas/legumes about a 5/10. Nuts and seeds about a 3.5/10. And whole grains only about a 2/10. Hence compared to certain or all other 'plant foods'...............any and all whole grains (oats, amaranth, rye, wheat, etc. etc.) have only a fraction of the health benefits of veggies and fruits: It only makes sense and is only logical to eat FAR more veggies and fruits than you do whole grains. If you do eat bread and any other forms of 'whole grains' then eat the healthiest varieties possible and never, say, white bread....there's no real reason to eat LOTS of bread. To reiterate, any and all whole grains only have small amounts of nutrition and micronutrients compared to veggies and fruits. No need in any way whatsoever to be a 'bread-monger' or 'bread connoisseur.' You can pretty much do almost without any bread or whole grains whatsoever (since they're nutritional value is so small) and still be very healthy...as long as you're eating a wide variety of other types of plant foods. Whole grains are ALMOST 'non-essential.'
Commercial rye and pumpernickel breads are made with wheat as the first ingredient. They are not great tasting as a result. And the benefits are lost there by. I find multi grain breads have to many grains to provide a tasty, let alone a distinctive, flavor profile.
Why is there no mention of phytic acid (a nutrient blocker). This is what make almost all bread bad for you. Whole grain bread has the highest amount of phytic acid. Sourdough bread is the most nutritious as most of the phytic acid is destroyed in the fermentation process. The longer the fermentation the better. 72hours is the sweet spot.
It's not about weight gain. It's about what happens when you eat bread or any grain for that matter. Bread is a carbohydrate, your blood sugar spikes because of bread. Your pancreas doesn't like to keep creating insulin, it's trying to pull your blood sugar back down. You have chronic elevated insulin levels. Elevated insulin levels (chronic) Inflammation lead to metabolic syndrome. Sorry, no bread is healthy.

You could try making quick breads. They use baking soda and or baking powder. The Irish have a bread called soda bread. No added yeast in it.
