When slow cooking u can base the meat with cold water seeming the meat has not start springing it’s liquid yet it won’t affect it unless u add cold water writhing the cooking process !!! Next thing u base the meat with a little water and allow the meat to spring its own liquid This is shit !!! Can’t taste good

The room temperature change back the texture of the meat to a little harder than before, so it’s like you removing tenderness. Think of it as spoiling meat and trying to bring it back!!
