I am Jamaican and love cooking so these videos are wonderful. It's a myth that cooking the curry without " burning " it will result in stomach issues, but doing this mellows and develops a rich curry spice flavour ❤
Blooming the curry (and other chosen spices) opens up and develops the flavour , much as the difference in taste between toasted garlic and raw garlic, or sweet paprika and smoked paprika. Depending of my mood I’ll bloom other individual spices that are also found in the curry powder.
I made a quick curry chicken, I had to make it quickly and I didn’t burn my curry. I always do and mannnnnnnnnn. The next day, let’s just say I was Queen on THE throne. Burn your curry guys…

I cooked curry goat and rice and peas while watching the tutorial videos. Due to Covid, many of the usual JA places where I live are either no longer an option or barely open. Thank goodness for Deddy and his recipes. My husband does not even like curry but he ate the entire plate and was had most of the leftovers the next day.

The point of roasting the curry first is to release the oils in the spice to get a more intense flavor and I agree not all curry the same. I like using ones that contains tumeric, saffron, cumin and a gara marsala . Like him I does put fresh veggies towards the end but I season mines with a green season first. But fabulous job. Ah watching 😁

I live in the United States, and I love Jamaican food. I live in Indiana to be exact. It is very hard to find out but I went to my butcher and got a leg of lamb. He cut it up in small pieces and I’m following the recipe exactly eyeballing the seasoning as your father is doing, I’m cooking it right now as we speak it’s smells incredible in this house. I got all of the seasonings that you showed in this video from Amazon. I couldn’t find a scotch bonnet pepper, but I used a ghost pepper which kind of looks exactly like a scotch bonnet pepper I’m so excited, I love how curry goat taste and I can’t believe I’m making it in my house. Well, not curry goat but curry lamb. I hope it taste the same. I enjoy watching your father cook what a remarkable man I love how excited you are when he cooks and the bond in the connection. I even ordered the same exact authentic pot and you’re not lying. It does sweat It’s on juices everything is going beautifully. I got it cooking on medium as he stated.

I’m on my second video after watching the steward peas. Fab, Fab, Fab. Love the father daughter interaction whilst cooking the traditional way. The kitchen amoungst Caribbean families is so important and we need to pass on the ways which we were brought up on. Some of the seasonings needs a little more explanation as these will vary across the world. On the whole, I enjoyed the watching as it brought back memories of cooking with my dad.
So, after watching this video last night. I had a a Jamaican friend get me some goat from his local Caribbean butcher and I’m going to give this a try at the weekend! This I one of my new fave food channels!

Cooking the raw spice takes the bite out of it being raw and bitter. Your dad is right because if you don't cook the raw spice it'll cause digestion issues. It also enhances the flavor of the spice, like toasting it to get a nice aromatic and smoky flavor. Great video, thank you!

Great dishes come to us, for me through my in-laws and where I've lived. My in-laws are from the Dominican Republic and Barbados and a few in Guyana. I grew up in West London and lived for many years in Bristol, we lived among a large West Indian community and Asian community too. Curry Goat & Jerk Chicken are among my favourite foods. Must be served with Rice & Pea.

Great dishes come to us, for me through my in-laws and where I've lived. My in-laws are from the Dominican Republic and Barbados and a few in Guyana. I grew up in West London and lived for many years in Bristol, we lived among a large West Indian community and Asian community too. Curry Goat & Jerk Chicken are among my favourite foods. Must be served with Rice & Pea.
Love watching and learning from deddy....I can cook but not Jamaican style so every now and then I want a different taste I watch the Jamaican way from deddy....love every recipe
