    Folks, use hot water when allowing it to stew. Cold or room temp water will toughen the meat. Hot water somehow allow the meat to tenderize quickly considering that oxtails is a tough beef cut. So, use hot instead. Oh, also add about two tablespoon of brown sugar when marinating. This serves as your browning agent and adds a unique flavor. The browning agent makes it kind of bitter so be sparing if using. One more thing, if you cook it using coconut oil, you'll be in heaven. God bless.

    I love oxtail but never cooked it myself .. The first time i cooked oxtail i used this recipe and LORD JESUS , it came out tender and jui-cyyyyyyyyy .. Nuff luv from ARUBA 🏝🏝

      I only use strong white vinegar...that does the trick and kills bacteria without killing you!

    Every time Morris says, Oh God, I can taste that delicious food. I follow your recipe, made about 12 pounds, with gungo rice and peas, fried plantains for my family and friends, Sunday dinner - May 16, 2021. I felt so very proud of this batch of oxtail.     Love ox-tail. I moved to a small town so I had to learn to make it myself. I use Mushroom Broth(not cream of mushroom) instead of water, a lot of oyster sauce and I also cut up pieces of chuck roast and add it to the pot.

      That is because people from the Caribbean especially Jamaica think they are the only ones who know how to cook oxtails! If your family is from the south in North America that is how it is usually done. Oxtails were food the slave owners gave the slaves period point blank! 🙄#my maw maw made them way better and she was from Louisiana...Next!

    I have been cooking every since I could climb in a chair, and stir a pot as a child, after I burned out the 4 easy bake oven's! My first cookbook was a Girl Scout Cookbook! And I have that passion for cooking, and by the look of thing's, you have it too! Measuring by eye will tell you a lot about a person's cooking!     Use jerk sauce good bcz it hot and spicy but have to use a little...Grace has an oxtail marinade....pressure cooker for 20 mins cook quicker 40 mins total cooking time...love your gungo rice and peas...

    Mmm, looks so good. I never cook this, scared of the old pressure cookers, saw the top hit the ceiling as child, lol. And it takes forever on stove top and i don't have the patience. I usually go to fam house during holidays to eat this. But will be cooking this soon since i bought a insta pot to save time and stress. Love your channel and cooking skills.

    this man cooks same way as i was taught from my dad ..from spanish town road kingston..
    only difference is we put spinner dumpling which he sometims calls spinach or spinnage in ...and use only whole spices not the sauces he used at first.
    and to all the ladies out there....most jamaican men from back a yard can cook good.
