    Dave, love your channel as a keto person and I've made a lot of “chaffels” which are savory waffles in a small waffle maker. My one tip would be - after you take your waffle out get a paper towel with some water in it. (You'll don’t have to put soap and just squeeze out water) and then place it on the iron and close it because that steam will get any dry bits that are your waffle maker :-)

    Carnivore dieters, swap out the almond flour, coconut, and that thickener and use ground pork rinds. I used one batter with beef gelatin and one without, and both turned out awesome.
    Dave, I love your videos. They show me what not to do, so thank you for your screw ups. lol

      Sounds like a good swap to make because there's over 400 mg of oxalates in just ½ cup of almond flour.

    I've watched a lot of keto recipe experiments & many have said its best to mix xanthum gum into the dry ingredients 1st to ensure better distribution & less clumping. The timers on the waffle irons were designed for cooking traditional waffle batters but longer time is needed for the cheesy batters. Most say its done when the steam stops. Thank you for showing your experience

    what a riot you are,,,,,,just a tip,, never use pam cooking spray on anything that is non-stick,, it ruins the non-stick coating and makes it stick even more, it already comes with non-stick coating so no spray needed,,,, wait until the steam stops, the light only indicates that the elements are on, not that the waffle is done, if at first you don't succeed try and try again, keep up the great videos

    The waffle iron is designed to cook on both sides but it generally needs 3 minutes per side. Use less batter. Close the lid and flip. Wait three minutes and flip again. Wait another 3 minutes and open once it stops steaming.

    Great video will try this. Try making a waffle with turkey stuffing then put turkey gravy cranberry on top. Takes like a Thanksgiving diner.

    I added another egg & it made all the difference. I was not using your recipe but doing something similar. It just needed more of a binder and so I added extra egg.

    Dave, I'm really enjoying your content and your attitude with life. One thing you need to know about waffle irons is when you watch it cooking you can see the steam coming up even if the light goes off. If it's still steaming you have to wait once the steaming stops it's done

      ⁠ It’s a mini waffle maker about 10 or 12 bucks. Makes single portion pop in the toaster waffles would work great for these!! Dash is the brand!

    Love your videos. I feel like it needed more liquid. When I change Pancake recipe to waffle, it asks for more liquid, 1 cup milk instead of 3/4 cup milk. Glad it worked for you in the end.

    It took me a few times to perfect waffles on my Mini Dash. I had batter oozing out like yours too, but the final product ended up being so dang good! 😂

    I agree with all the tipsters. No spray needed, wait till steam stops. You may try adding the cheese first to the waffle pan, batter, then cheese again. Mine comes out crispy that way. Also you should always wash any New appliance before using to ensure you’re not eating any factory residues

    Oh Dave, not only do we read through the recipe first, but reading about a new appliance before using just might help the recipe come out better, I mean neater. Patience, what a concept.     Hi, i just subscribed to your channel, i have been really enjoying you and your recipies. Took me quite awhile to realize if you open your waffle iron too soon it splits your waffle as you found out lol. Usually when it stops steaming it can be done but still that’s not always the case. just make keto waffles all the time and keto and I’ve been trying to get back on. I made a batch of waffles. Couldn’t remember how used to make them and they did not turn out very good so I would like to try these because I love savory waffles they’re a great snack. They make a great sandwich. You can put anything on them, they’re yummy and freeze well and if you want to just pop them in the air fryer or toaster for a minute to crisp them up you’re good to go Nice to see your so real❤

    As a general rule for waffle success...you have to wait until it stops steaming. I noticed you opened when it was still steamy. Love your channel and thanks for sharing!

    When it says it is ready, wait also for the waffle iron to quit steaming.

    Watch the steam. When it's still steaming, it's not done. The light doesn't mean it's done.
    When it's not done yet, both sides will stick the iron. When it's completely done, it releases better. Plus, if it's not done, the center is still raw, it can't hold together.

    Use a scilicone basting brush to add better oil like olive or baccon fat. Cook till it stops steaming, should be a little crispy on the outside tendervin the center. And you can use a clean, basting brush to clean out the little leftover bits.

    I also addca fat in my batter. Butter, tallow or lard

    Here's what I do:
    After I clean the waffle maker, use the basting brush and brush with Avocado oil. Put away.
    When you are ready to use the waffle maker - before plugging it in - wipe out the unit with a paper towel. Use as usual...
    You can get spray Avocado oil in a can too, at Costco.

    WAIT FOR THE STEAM TO STOP. Also flip it to cook on both sides down/up. Itll help it loosen also.

    You need to leave it longer. Till the steam stops. And I found that spraying oil only makes it stick more for some reason. I trust in the nonstick stuff

    Instead of mixing the cheddar. First sprinkle half the cheddar then add the mixture, then sprinkle the rest of the cheddar. No pam needed. Makes it a bit more crispy. With that wet of a mixture, 7 to 8 minutes is needed.
    Mix the Xanthan gum with the dry ingredients first. It tends to gum up into a ball if it hits moisture.
    I bet you don't have to use both flours. Like 1/4 cup of coconut or 1 cup of almond flour should do. Xanthan gum is a keto replacement for baking powder.

      Why replace baking powder with xantham gum as both are a corn product? This is a real question out of curiosity. I'm allergic to corn so I just make my own baking powder.

    Your macros say the figures are for 1 serving, but the numbers are ridiculously HIGH, so I think the macros you gave might be for the whole recipe. But then you didn’t mention how many servings.
    It really helps when you include those details so we can figure out the carb count and the protein, etc.
    It’s a lot to keep track of but you present a really clean kitchen and a delightful attitude with some humor, a wonderful & entertaining mix! Thank you!

    It's usually 4-5 mins before they are ready. The steam will just about have stopped. If you open it too soon, it hasn't had time to complete the cooking, so it'll end up with what you just saw.

    Avocados are wonderful. There's an easier way to slice and peel. Slice the avocado in the rind, but don't cut the rind. Just use the tip of the knife, pointed down. Slice down into it making long vertical slices, or across for as you did, but only cut the fruit, not the rind. After you make all your slices, you can either scoop them out with a spoon, or turn the rind inside out.
    Writing it makes it sound harder than it is. I should make a video about this, but my kitchen is awful. I don't want to put it on display!

    You might have to preheat your waffle maker. i have a Cuisinart. the light goes off when it's heated, then you add your batter & close it. The light goes back on when your waffle is done.

    You should open only after it stopped steaming. More eggs and sticky/stringy type cheese will help it stick.

    Dave you should do some "vintage" recipes instead of AI....use those old vintage cookbooks or hand written recipe cards....just an idea!

    Did you butter the grids first? Adding butter to the batter tends to make it stick less. Also, waffle batter is usually pourable. I've never seen it stiff as yours.

    I have a waffle maker too and recently used it. Mine does the same thing - separate. I wonder if it’s the almond flour because it is a little more dense and thick than All-purpose.

    I think you had too much batter and if you use mozzarelle cheese it will work better. Also you add some sherred mozzarella cheese on your grill first and then add the batter 1/2 . it will work.

      I agree. That's what the Keto Twins do and their Chaffles look pretty good. Also by adding a sprinkle of mozzarella (top and bottom) you wouldn't need to spray oil on the grill.

    Makes sense it too longer to cook as is a really thick batter. Seemed much thicker than traditional batter which is more like pancake type batter.

    Add more oil to the batter and thin it down a little. I don't think it will work without wheat flour.

    Read the instructions on waffle iron.. Usually 5 minutes one side and 3 .5 on the other.

    Chaffle maker here….yes you need to let it cook longer! Batter is not the same as traditional waffle batter!

    If i ommit certain things it'll still work right? Like Xanthum gum. If i use Psyllium Husk should work?
    Also i have no coconut powder, but pecan powder... Maybe 1 tbsp of coconut oil? Should still bind i think. No added cheese 🤔
