Hey Albert, esto se ve muy bien. I think it will go really well with one of your potato recipes (with several of them, no doubt, but only one at a time!). I am leaning toward either grandma's or poor man's (some sort of human-oriented potatoes for sure). Romesco and potatoes go so well together--in a pinch, just some fingerlings pan fried in olive oil with some salt would also do very well.

in the red pepper sauce I have a question is it possible to use lemon juice instead of vinegar or apple cider vinegar as I am not too fond of other vinegar flavors

Looks good, but every time I use a jar of those beans, it’s super difficult getting them out. All stuck together. I’ve tried using running water and shaking it, and even worse, using a knife or fork. What’s ur secret?

Epic? Yes, it's awesome but it's part of the "cocina de aprovechamiento", using leftovers of spinach and beans casserole. I'm from Lleida, and hour north of Tarragona, and I grew up eating this.
