This is almost exactly my experience. Dad was stationed there when I was in 3rd and 4th grade. It's inspired a lifelong love of Spanish foods and cooking.

I just tried this, and... I'm speechless how good this is. And, I did it with just daikon radish instead of potatoes (diabetes, insulin resistance, etc.).
Superb, just discovered you and have subscribed. The little extra details really help a novice cool like myself, like showing the flame so we can see what you consider a low to medium meat is, the size of the pan and all these little details. I definitely want one of those pans! Thank you!

I grew up eating a French potato omelet (no onions), but when I visited Barcelona I made the switch to tortilla! Love the recipe and didn't even know there were pans specific to this purpose. Love it and thank you! Your recipe is spot on. The only change (in keeping with the ones I ate in Barcelona) is they slice the potatoes to about 1/4" (probably use a mandolin) and there are really cool looking stacked layers of potatoes. Could have been just the way they did it in that area. THANKS! Def getting the (cheaper) pan.

My own variation: I cut the potatoes exactly the way you do, but I put them in the pan before the onion. I use a Spanish onion and slice it rather than chop it. After adding the potatoes to the eggs, I add a 1/4 cup of chopped prosciutto (or ham), salt, pepper, and parsley. I love your double pan method; will definitely try that the next time.

I followed this recipe and made my very first tortilla! And I must say, it turned out pretty great! I had to add 2 more eggs because I felt like the ratio of potato and onion to egg was a bit off (likely due to the size of my potatoes), but all good. Thanks for this video!
Last month, I was introduced to this dish in Madrid and loved it so much had it several more times on my first visit to Spain. I chose Russet Potatoes and decided a medium potato was 8 ounces. It was a little too much potatoes. I’m either going to reduce amount by 25% or add two eggs. In either case, very useful video and a very clean written recipe. Asked family members if they want to see it again. All said, “Yes.”

I cooked the egg mixture in for 10 minutes, but I wanted it a little bit runnier, so will cook the cooking time down by a minute. Also, going to use a mandolin to slice the potatoes more evenly. I live in Murcia, Spain....and I have one of those pans....very useful. I make tortillas like this but must admit to adding some garlic and parsley to the mixture. Not authentic I know but I’m a garlic fan!
Love the way you explain it. A long time ago, I met an Española, visiting my country at Puerto Rico and she shared this recipe with me. She made it a bit different, the cutting of the potato. Instead cutting the potato in halves she cut it in round slices. And the way she mounted was in layers, with the egg batter and put it all in the oven, I guess. It looked as a cake. I feel that I’m gonna make it again. :) love your video!

I think this video came out when I lived in Spain, so I didn't pay to much attention, (as I could buy them cheap at supermarket). Fast forward, back in USA, and I have to make them myself. I have the 24cm non stick pan and got a plate that fits inside the rim, making flipping easy. I think the hardest part is getting the egg to potato ratio right. Today's tortilla was a bit short on the egg, but still good. Haven't seen any recipes specifying in grams the egg to potato ratio. Seeing video helps to get the right ratio. Thx.

That pan seems very helpful indeed! When using the plate-flipping method, it seems necessary to wait until the top is completely set before flipping, otherwise you have uncooked eggs leaving a snail trail as the tortilla smears its way from the plate back to the pan. But of course a tortilla is so thick that it really takes ages for the top to set like that. With this kind of pan, that's not an issue. You cook it until the bottom is done, and you flip it over even though the top isn't set yet. It's faster, as cooking from bottom all the way to the top would require a lower heat setting to avoid burning the bottom, plus it probably doesn't dry it out as much. The potatoes and onions are already cooked, and ideally you don't want to spend too long cooking eggs because they're more tender when cooked quickly.
Will definitely be trying this delicious recipe . I make the garbanzo bean stew on a regular basis as it's so delicious! Meat prices in UK are still soaring so substitutes in recipes like beans,peas, lentils etc are a welcome addition to anyone's diet, cheaper & far more healthier and nutritious.( If only I could convince my husband 😂) Please keep your fabulous tasty nutritious recipes coming everyone's way! I have an 8" cast iron pan that I use specifically for this dish. It is 50 years old. I learned to make this in Madrid as a teenager.
I used 6.5inch cast iron for 2 eggs, I think it's a best tool to do the job.
I am married to a Catalonian and have been making Spanish omelets

I used to eat this in bars in Madrid, in the late 70s while stationed there in the military.
I usually cut the potatoes into large thin slices that way you get layers when you cut it. I also like to add a splash of garlic oil to the eggs

That pan seems very helpful indeed! When using the plate-flipping method, it seems necessary to wait until the top is completely set before flipping, otherwise you have uncooked eggs leaving a snail trail as the tortilla smears its way from the plate back to the pan. But of course a tortilla is so thick that it really takes ages for the top to set like that. With this kind of pan, that's not an issue. You cook it until the bottom is done, and you flip it over even though the top isn't set yet. It's faster, as cooking from bottom all the way to the top would require a lower heat setting to avoid burning the bottom, plus it probably doesn't dry it out as much. The potatoes and onions are already cooked, and ideally you don't want to spend too long cooking eggs because they're more tender when cooked quickly.
