you shouldnt put garlic. its like putting pinaple on pizza. if your adding anything, it would be some chopped up cilantro. you chop it up and mix it up. with everything before you uput it all in the pan to make the tortilla

Amazing with a slice of "pa amb tomàquet" (bread with tomato). Also works for a sandwich with baguette type of bread (the baguette with tomato and olive oil instead of butter) if you have to be on the go.

Good technique except there really is no reason to let the egg/potato mix sit in that bowl for 20 minutes. As soon as it's well mixed, pour it back into the pan and continue as shown in the video.
I disagree, there is a very good reason to let the ingredients set for 15 minutes or so. They sit alongside each other with the eggs and they gel together and it's much easier to manage them. If you do it your way, which yes it saves time, you will find they are not gelled together and will more difficult to manage when you are turning the omelette over. It will be more runny. You are not a chef and there is a reason for everything. I'll put it to you like this, why take them out of the pan at all ! Just throw the egg mix on top. Ok it's not going to taste terrible but it's much easier to gel them all together .. you may have said something popular as most wouldn't understand why to leave it set but you are wrong wrong.

If you're using frozen spinach, thaw and squeeze all the water out, then add about 1/3 cup to the egg mixture with the cooked potatoes. For fresh spinach, I would sauté them separately and add to the egg mixture. Hope it turns out well!

i remember my training, this is the first dish i learned to cook, it teaches so many skills at once i'll never forget how to make it

Shallots make a great sub for onions. Their flavor is milder and sweeter, with a noticeably lower pungency. Leeks are another option to consider.
