  • Good-quality canned tuna is a fantastic ingredient. It's cheap and versatile. For this recipe add East Asian flavours - chilli, spring onion, coriander - to add flavour to this simple fishcake.

      Although their food was terrible regardless of the origin of the ingredient

      NaCl this recipe is meant for home cooks, not professional chefs. if i’m eating out at a restaurant, i don’t want to be paying for a dish of canned tuna.

      NaCl he does that to get the chefs to be brave and cook with fresh ingredients as opposed to canned food. Plus he is a Michelin Star chef; when he’s working the restaurants he uses fresh ingredients. But at home he cuts corners, and these videos are meant for cooks who want a delicious meal but still use prepackaged or canned food. He cuts corners for his home viewers.

    Made this during the great Corona depression, except subbed tuna for canned salmon, also subbed kafir lime leaves with simple lemon zest, then my dipping sauce consisted of mayo, mustard, tapatio hot sauce. Fucking delicious

    I have tried your recipe using steamed fresh tuna instead, it was amazing. I got all fresh ingredients here in Indonesia. It was amazing, moist inside and crispy outside. My son just loved it. Big thanks Gordon.

      Yogi Tjiptosari: I don't think tuna is a fish local to Indonesia. In Malaysia, where I live, not so far away from you, tuna is pretty expensive and (as far as I know) only available frozen or canned. Maybe we should try Ikan Tenggiri - I think that translates as Spanish Mackerel, caught fresh here. However, I haven't tried it yet.

    Gorden Ramsey
    Spicy tuna fish cakes
    Drain tuna in sieve, slightly flake them
    Slice water chestnuts nice and thin
    Grate ginger in
    Slice spring onions at an angle
    Chop fresh coriander in
    Finely chop chillies in
    Chop Kafir lime limes in
    Touch of salt
    Touch of pepper
    Lightly season with fish sauce
    Add two whole eggs to bind
    Mix with hands
    Roll mixture hand to hand, pat fish cakes down with palm
    Add ground nut oil to pan to cook
    Cook fish cakes for a few minutes
    Dipping sauce
    Pinch of sugar
    Two tablespoons fish sauce
    1 tablespoon rice vinegar
    Fresh lime juice
    Lots of fresh coriander
    Reminder to come back and try this

      FallaciousScotsman When you want to make stuff like meatballs or fishcakes there is no real point in having super high quality fish/meat because it doesn't really make a difference. If you want to use fresh tuna, you should just cook the fillet.

    Didn't have any fishsauce left - took teriyakisauce instead, turns out it makes the crust even more crispy as the sugar caramelizes, so delicious

      I use corn meal in my Salmon patties. Panco is better but Too light for something like Salmon. I do use fresh green onions and parsley. I would never use anything in a jar when it comes to the onions and parsley.

    Quite easy & delicious!.... Bravo Gordon!... You really love & enjoy cooking. Tip for kaffir lime leaves substitue: Use a combination of lime and lemon zest, about 1 and 1/2 teaspoons of finely chopped lime zest can be used in place of one kaffir lime leaf. Try one teaspoon of lime zest and 1/2 teaspoon of lemon zest, and then adjust to your taste.

      He's a "Five Star Chef" known all over the world. He's my most favorite. Also watch Marco Pierre who is also a Five Star Chef. They both worked together and Gordon worked for Marco Pierre as a sous chef , even though they were almost the same age. I love these two guys. They are such an inspiration to me and my cooking.

    This looks sooooo good! Usually when people cook "Asian" style food, it's not even close, but as an Asian, this is pretty awesome. The ingredients he used reminds me of Thai style or Laos style cuisine

    If you have a cat, save the water from the tuna can in a large measuring cup, rinse the can with water afterwards and pour into the cup, add a bit more water, stir it up and pour into an ice tray and freeze. They're like little popsicles for cats. My Siamese loves them. One can makes about 1 tray of ice cubes without being too diluted.

    It's surprising to see him use canned ingredients, but it is NOT surprising that this recipe was made to instruct us on how to cook an easy dinner. For the general population to cook. WTF, if you're complaining go watch videos where Ramsay buys an expensive prime rib chunk for small steak sandwiches.

    just made these myself. tuna, serrano pepper, carrot, taragon, dill, ground corriander seeds, eggs, and soy sauce. Wasn't sure what to expect, but wow. Got lazy and just dipped them in simple mayo, but man, these were tasty. the people saying its bland, you simply used too much tuna and not enough other ingredients. its not a fault of the recipe

    I didn't make this tonight but it did inspire me to make tuna fish cakes with what I had in the house. I used ground coriander instead of fresh and I put some sweet chili sauce into it as I had that in stock. I did not have water chestnuts but I always have fishsauce. Well the point is that I made tuna fish cakes with what I had in stock and what I thought might taste well. It was kind of a proof of concept to me. I had no idea you could make something this good from a can. But if a 3 star chef is allowed to cook from a can then so am I :-) After tonights good food I'll defintely try and replicate the chefs version.

      I do too. I use corn meal and fresh green onions and parsley. Cannot beat a freshly cooked Salmon patty. Make sure the oil is hot but not smoking. Canned Salmon is already cooked but the egg still needs cooked. Panco can be used too instead of corn meal, never use flour.

      Nah, scallops are done even shorter on a seriously high heat (smoking hot), in my family we refer to it as pin-pan. You need that for it, otherwise they just go chewy.
      But yeah, those fishcakes didn't look they were taking very long either.

    Here in Philippines we usually do that with our left over Fried or Grilled Fish
    Just mix the slice of fish meat,pepper,salt,flour,eggs,crush garlic sliced onions.

      MillionsSaenz could be because of the salmon. The egg mixture helps bind it together & helps it brown. Try using tuna next time, be sure to drain it, and don't make them too thick.

    Tip....if you don't like fresh coriander...just use parsley instead (personally i don't like fresh coriander)... for more crispness use pizza rice flour before frying (Greek variation)

    Thank you, so much! Such a DELICIOUS, INEXPENSIVE MEAL! I have turned to fish and poultry as my primary sources of animal protein. I no longer consume pig or cattle flesh, in my attempts to battle atherosclerosis

    These are my three recipes i am going to master during lock down. These beautiful fishcakes as i love my mums ones so im going to try and put her to shame with these. The spicey beef lettuce wraps with that dip are a must too and last but not least. The fried chicken with pickles and biscuits as a dessert. All moderately simple but its going to put a smile on our faces at such a shit time.

      @@shawbrothersgirl2740 I tried it, the fishcakes are fine, but the sauce is just OMG terrible !!! Couldn't even imagine dipping smth in it. Fish sauce is not smth to be used just like that.

    When this started I just knew Chef Ramsay was going to say "And now feed this to the cat. We are using fresh tuna" but no. He didnt and turned a 2 dollar can of tuna into a 15 dollar app. Nice.

    Same way but instead add a touch of tumeric, corriander powder, chilli powder, onion, fresh corriander, salt pepper and egg to bind. Amazing!

    In Mexico it was difficult to find Water Chestnuts so we substituted the Water Chestnut with Jicama. Later, after some searching, we found a tin of Water Chestnuts. I have to say, I preferred the taste of the fresh Jicama. Otherwise a fantastic recipe. Maked again for the second time with the Water Chestnuts. Definitely a keeper recipe, but next time to be made with Jicama.
