True, it's been a minute
Sam you should not shake it before you taste it, the fermentation process always leave some garbage on the bottom during the fermentation process.
So taste it as clean as possible to taste the actual taste, if you think it need additional fermentation then you shake it and if there is any thing left of to ferment it will activate again.
Once you're happy with the taste pour it in a new vessel that's clean through a filter ( coffee filter or similar will do fine ) and then let it mature in that new vessel.
