ORGANIC VEGAN CINNAMON DONUTS WITH A GLAZE

    Look for further with these simple baked donuts.
    All organic, gluten free, soy free, dairy free, and refined sugar free.
    Incredibly easy to make and satisfying as well!
    This is a medical medium recipe that I've tweaked.
    Enjoy.
    Ingredients:
    1 1/4 cup gluten free oat flour
    1/2 cup almond flour
    1/3 cup maple sugar (or coconut sugar)
    1 teaspoon cinnamon
    1/2 teaspoon aluminum free baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon sea salt
    1/2 cup almond mylk (or another plantbased mylk of your liking)
    1 tablespoon maple syrup
    1 teaspoon pure vanilla extract, alcohol free
    1 teaspoon lemon juice
    Preheat oven to 350 degrees F.
    Add the oat flour, almond flour, maple sugar, cinnamon, baking powder, baking soda, and sea salt to a medium sized mixing bowl and whisk thoroughly.
    In a small jug, mix together the almond mylk, maple syrup, vanilla, and lemon juice.
    Pour on top of the dry ingredients and stir with a spatula until well mixed. The batter should be thick but pourable.
    Place the batter in a piping bag or zip-lock bag with the corner cut off. Or use a spoon, and even out by hand (water helps to dampen your fingers if so).
    Pipe into a non-stick donut pan and bake for 14 minutes. Cool for a bit, then remove from the pan and allow to cool further.
    Cinnamon Glaze Ingredients:
    3/4 cup cashews, soaked and rinsed
    1/4 cup water
    3 1/2 tablespoons maple syrup
    1 tablespoon melted coconut oil
    1 teaspoon pure vanilla extract, alcohol free
    1/2 teaspoon cinnamon
    1/4 teaspoon sea salt
    Blend the ingredients for the glaze in a vita-mix until silky smooth. Transfer to a bowl.
    Allow to cool.
    Dip the donuts into the glaze and watch it set.
    Store in an airtight container in the refrigerator.
