Traditional Scottish Shortbread - Just 4 Ingredients

  • Traditions are the best part of the holidays and this is when I get to make my family recipe for Traditional Scottish Shortbread. Rich, tender, irresistibly buttery and wonderfully delicious, my Scottish Shortbread is made from just 4 simple ingredients. You can make it in a pretty mold or in a plain old pie dish. No matter what you use, it’s a great snack with a cup of tea or a dessert with a glass of champagne. The perfect addition to your holiday baking repertories.
    === 🍽🍸🥩 RECIPE ===
    1 cup (2 sticks) softened butter (225 g)
    2 cups flour (270 g)
    3/4 cup confectioners sugar (115 g)
    1/8 tsp salt (or less if using salted butter) (pinch)
    Preheat oven to 325°F. (165°C)
    Spray pan with cooking spray and set aside.
    Mix all ingredients by hand, place in pan or mold.
    Bake 35-45 minutes, start checking for doneness at 30 minutes.
    Shortbread should be light golden.
    Cool 15 minutes, cut while still warm.

      It's called "cozonac" , here in romania, it is a sweet braided bread filled with walnut and kokoa and sugar or sometimes with poppy seeds or Turkish delight. Check it out over the internet, you might want to give it a try 😉

      Both ...... my oldest son needs his Scottish shortbread & we need rolled cutouts hear in the US..... but I do wish I could get that beautiful mold you make your shortbread with!!!!! 😉

    My Dad passed away a few years back. Shortbreads were one of his favorites. I made many with him as a child. He had an identical pan to the one you used. I had always wanted to find that pan to remember my father and the times we spent together. I found the pan last week while going through some things at my mother's house. Thank you for the recipe! I am off to make it now and remember some good times!

    I just found the “shortbread pan” like your mother’s at a thrift store. I’ve heard of shortbread but never made it. I came across your recipe while searching UA-cam. After watching several recipes, I think yours looks and sounds the best. I will make it and let you know how it turns out. I’m sure it will be delicious.

It's tough this season to do things for others while trying to be safe and baking is rewarding on many levels. As short and simple to prepare as it is combined with how good it seems it could be perfect with my coffee every morning. If the first turns out as I expect I'll be making a number of them. There isn't anything like fresh baked goodies.

    Hello from bonny Scotland, you can't beat shortbread, my mother's was amazing and I have wonderful memories of her making it at least once a week and watching her prick it with a fork, that's an important step, the wonderful smell that came from the kitchen I couldn't wait to have a piece straight from the oven, and at Christmas she would make it for friends and neighbours, my mum used half flour half rice flour and caster sugar, always sprinkling the sugar over the hot shortbread as soon as it came out if the oven. I've just made a batch today and more to make for my family tomorrow they love it. I enjoyed your video.

    Thank you for sharing your family recipe and memories. I first had shortbread cookies in school in Hawaii in the 50's (I wonder if it was a legacy from the missionaries). I used a recipe similar to yours to make shortbread for my daughter in the 70s. I believe it came from an old home ec textbook. Your video has inspired me to teach my great-granddaughter how to make shortbread for Valentine's Day.

    When you pulled out the Martini, I immediately subscribed to your channel! This episode popped up because I looked up shortbread recipes today. It's Summer, so I added the zest of a lemon in it. Wow, it tastes good. I bought my shortbread pan a couple years ago and it's square, with nine individual shortbreads instead of eight triangular wedges. My pan is decorated with floral patterns, so is great for "year-round" baking. I am looking forward to seeing more of your videos. Cheers

    My grandmother told me you use your hands because the warmth from your hands helps the butter warm up and mix better with the flour and sugar. She was born in Scotland. We always looked forward to her shortbread.

    I was a child in the 1970s too and my grandfather was from Scotland as well. He did make shortbread nor did my mom but my grandmother did although she was born & raised in England.

    My mother was a workhorse in the kitchen. Baked and baked for weeks during the holiday season and stored them in the freezer. I could never replicate her recipes to the tee. I miss her so much.

    I don’t know if you are aware of the ‘First Footing’ tradition in Scotland. It is that the first person to cross your threshold after the bells (the stroke of midnight from Hogmanay into New Years Day) would bring a lump of coal, something to drink (usually whisky) and something to eat (usually shortbread) as a wish of health and prosperity for the coming year to the household. So as a Scot, this and my my Mum making it are always my first thoughts when shortbread is mentioned and in the U.K. in general I think that shortbread very much screams Hogmanay.

    My dear neighbor always makes a a holiday gift basket around Xmas time that includes these rosemary shortbread treats, which I greedily devour, but I'm definitely going to try this one after somehow acquiring one of those ceramic pans! Thanks for sharing this, and those precious memories!

    As I was watching your video, I suddenly smiled when you were introduced to shortbread. I first (and last) tasted it when my fiance' had his dad bring gifts for me last Christmas 2019. His dad was here because he got married to a Filipina. I could still remember the smile that was brought by that "milky"/ "creamy" biscuit as how I described it before. And now I am looking for a recipe that would allow me to relive that moment when I first tasted it.     This recipe is delicious! I did this in an 8X8 pan using your technique of mixing with my hands and pressing in to an 8X8 baking dish, using parchment paper for easy removal and all I can say is WOW!! will be making this again and again! Thank you for sharing your family recipe!

    I definitely shall make this as a wonderful dessert, I sometimes put a whole meal together for my family events and lots of other people that I work with get a whole meal too. almost like catering, so yes a "simple" to make/do recipe is always a win for me when I've got to preplan and cook several dishes.

    Love this rcipe! Ii mmmake these for cookie echanges. I useea stad mixer, let's me continue with arthritis. Still awesome results. I have round molds to make petticoat shapes and also individual shape and design molds for all seasons and subjects. Lots of fun results.

    I felt so bad you had to taste that delicious warm buttery shortbread. You are brave.
    My mom didn't do the one hand trick but she did have a knack to shine in the kitchen and made wonderful food. She also usually had a martini not to far away.

      @@LetsCelebrateTV I've made millionaires shortbread several times. I usually make shortcake with strawberries for Summer but I am a fan of regular shortbread and I liked your how-to video. I think it is time to try my hand at this with your recipe as soon as it is cool enough around here to run the oven. Right now room temperature butter is nearly liquid. I hope I don't have to wait for Christmas for the temperature to drop.

      @@LetsCelebrateTV I used a simple baking tin, and the amount of pastry was enough to make 2, the tin diameter is 20 cm😊 don't know how to add a picture here😅
      A tip, if you're using smaller tray, check your shortbread as soon as you can smell it. It's almost ready as Peter advise, mine came out a little bit brown😂

    I love shortbread and have made it myself several times but used granulated sugar. This is my first time using powdered sugar. I haven't pulled it out of the oven yet. It has 3 minutes to go on the 30 minutes and I'm just now able to smell it. My grandkids will be with me over the weekend and I know this won't make it past lunch time on Saturday LOL. A few times in the past when I made shortbread I've drizzled chocolate on top and its a lot like those little elves cookies, fudge strip. I just know this is going to be my go-to recipe from now on.

      Technically powered sugar is not in the traditional recipe, but I was introduced to it that way from my mother. Having done it both ways, I prefer the texture with powdered sugar.

What could go wrong, lol....will do a couple just to test and if not will roll it out and use cookie cutter as do not have one of those beautiful shortbread ceramic with stamps.     Well I made my first shortbreas using the recipe from this video and enjoy it very much. May make shortbread more offen. However I did add a teaspoon of vanilla and if was still enjoyable. Wonder why some prick holes in their shortbread while this recipe did not need it. Anyway looking forward to buying shortbread pans. Thanks for sharing!

    I am from Scotland and it amazes me how many different recipes there are. This one is nothing like mine and it actually comes from Scotland!!

      I have found that other than people adding "flavorings" that the only main difference is "sugar". Some use regular (caster) sugar and some use confectioners (powered) sugar. I prefer the consistency you get from confectioners sugar. 🍸🍸

    I have been looking for this recipe. I used to make it years ago for my kids. The only ones I could find on line had things like rice flour and other things I didn't want. The only difference is the sugar. I used to use faster sugar which is fine than normal sugar but coarser than jcing( confectioners) sugar. I will be making it your way as my daughter is visiting from Scotland!!! ( I live near Gatwick airport uk😀 I know where I've been going rong. It's that martini !!!!

      Its 1:16 am for me and mine is baking as I type. 10 more minutes and I check the color. I can hardly wait. I sure wouldn't want to have to wait 3 more months to make a batch. October seems like a good enough month as any LOL. My grandkids will be with me tomorrow evening and spend the weekend so I know it won't last long at all.

    I wish you had variations such as chocolate, fine ground almonds/ almond extract, ginger/molasses. I would like to make all three and slice them and present all three varing the slices in the same box. I have the same creamic mould!

      Thank you! Yes we have a big UK audience, so a couple years ago we started including the metric measurements as well. I find the confectioners sugar makes a more tender shortbread. And, because it has cornstarch in it, I don't have to use rice flour, which many recipes include. Thank you for watching!

      Yes, as I understand it, it's about the same as icing sugar in the UK. Castor sugar for you is similar to our granulated sugar. I could use regular, granulated sugar, but I find the confections sugar, or icing sugar, incorporates easier into the the dough, which gives a more tender result than castor or regular sugar.

    You’ve inspired me to use a ceramic pan that I’ve had for years and never used! If I wanted to make black sesame shortbread, do I just add some ground black sesame seeds or would I substitute some of the flour with the ground seeds?

      I have never heard of black sesame seeds in shortbread, but a quick scan of Google shows lots of recipes. It looks like they just add them into the dough. 🍸🍸

      We created this video years ago before we gained an international audience. In the show description we added all the metric conversions. Here they are:
      1 cup (2 sticks) softened butter (225 g)
      2 cups flour (270 g)
      3/4 cup confectioners sugar (115 g)
      1/8 tsp salt (or less if using salted butter) (pinch)
      Preheat oven to 325°F. (165°C)

      Some recipes call for cornstarch, as it has no gluten, to help keep the shortbread softer and use less flour. I achieve this same thing by using confectioners sugar which does a better job and makes for a better texture. 🍸🍸

      Confectioners sugar or icing sugar, contains cornstarch or cornflour as we call it outside the US. As stated it keeps the dough "short" ie: not chewy. Many old recipes contain rice flour for the same reason

      You can, but the baking time will be different. You will need to rotate the pan during the process to make sure it cooks evenly and through.

    What about the use of the wood shortbread mold. I have recently seen these pans and wonder how well they work. I see 5-8 inch size. Is there a preferred size. I was drawn to the wood mold instead of the pottery style because I worried about breaking the pottery one.

      Typically those wood molds are not for cooking the shortbread in, but instead to put a pattern on the dough. You should not be worried about the pottery molds, most are seasoned clay, and newer ones like we have links to in the video description, are ceramic. Short of dropping them off a tall counter, they will last forever. My current mold was passed down to me from mother and is at least 40 years old and not a single crack.
