Actually, I've added the cream for Zuppa Toscana right after removing it from the heat and while it was still hot. But I continue stirring it so maybe that's why it never curdles. I love cream soups!
In many countries heavy cream is lower in fat and higher in protein. It is the protein that curdles. If fat content is high enough, it does not. Fat content of heavy cream in Austria is at least 36%. No problem mixing it with hot fluids.

For goodness sake, not another video showing how to chop vegetables. I’m interested in the recipe and it might be informative to show the order in which you cook the ingredients but you could chop all of the vegetables and place them in separate bowls before putting them in the pan. 😮

Except for the red pepper basically my Omi's potato soup - and then she put in Fleischwurst (ring balony) which I leave out these days - but oh such happy memories.

Maybe blend half of it and leave the other have with the chunky vegetables. A bit of wine or Sherry, and a chunk of butter. Makes me want some right now.
Why? The potatoes are added last because the pan frying with oil makes the least difference to them but will bring out the flavour of the other vegetables.. 30 minutes simmering is more than enough time to cook the potatoes fully.

Well, I am Norwegian, and up to my knowledge, this is not a Norwegian soup as far as I have heard about. But it look good, and a nice video it is. Just a question; who do you use water instendig of a good stock? That would take the soup up to the next level.
Looks like a scallion (green onion) to me. Leeks are much bigger and we use the white part for Vichyssoise. You have to clean them thoroughly as well since they can have dirt/grit inside the layers. I make Vichyssoise soup about 3-4 times per year. .

The soup should never be cooked at a hard boil, always simmer soup, especially with cream in it. It's a nice recipe.
One could use the same amount of crème fraîche to ensure the cream wouldn't split.

Why can these chefs not chop ingredients off camera, put the pieces in small bowls and then fry them off in order of recipe? I know how to chop.
In fact all we need to see are the chopped ingredients thrown in together, stirred and cream added.

Yes, using an immersion blender to puree some of the soup would thicken it, without having to use cream.

Für mich eine normale Gemüsesuppe, ich hatte etwas Fisch erwartet.Lauch ist schneller gar als Kartoffeln, daher gebe ich ihn zuletzt dazu...😊
