I have done the same kind of thing with home ground pork, home ground ham, bacon and onions. I did not make them into rings but laid them out as logs with the bacon wrapped around them. I kept my heat down to about 200 degrees burning Hickory chunks. I cooked them all day and served them with hot dog buns in the evening. The problem with this is that it takes all day and I have to constantly baby sit the fire, therefore I cannot do much of anything else with my day!! The profuse compliments all evening make it worthwhile!!
Although challenging to make it looked tasty and something different..... I'll bet it works great with ground venison also.....
Those are a lot of fun to make. I highly recommend using those other onion rings that you didn't use wrap two or three rings in bacon without the ground beef. Good stuff.!!

Vidalia Sweet is just beginning to show up in stores, and the Texas Sweet is next up. Another idea is to use the smaller inside ones over beef hotdogs and then bacon. Done in foil packets for grits and shiggles.
