Tried this not long after it was posted, I added a diced Serrano pepper to the burger filling for some kick. Love the technique. Today I went off the rails, and used ground pork, added lemon grass, galongle, tamarind paste, soy sauce and fish sauce. Made a soy sauce, fish sauce and tamarind glaze, and a fish sauce Thai basil, and bird pepper dipping sauce. Tossed a soaked mix of cinnamon sticks, cloves, allspice, black cardamom, and star anise in a foil bag with a few holes in the coals. Thanks for the inspiration. Just subscribed.

Then a small amount of cheddar over the whole thing just a few minutes before being done and I have to say that I will now be adding this dish to barbecue menu in the summer at our house . @@Armadillopepper yes for some odd reason they give me migraines...I still dabble with a bit of onion powder tho! That burger made me want to risk it all😭👍
It's a little easier for me to season the ground beef first. I use 1.5salt based seasoning mild or spicy. I also leave out the cheese mixed in. I press high temp cheese slices pressed into the ground beef to seal the beef off. Then I wrap in bacon. Then I deep fry until the bacon is crispy. Oh my word they are good. I grind my own sirloin.
This looks so good, so gonna make this next week for Sunday Dinner on my WSM. One Question for everyone. I made Jalapeno Poppers over the weekend for Family Dinner and they were a hit. I noticed that although the outside of the bacon was nice and crisp and cook the inside was soft and raw. I actually had to unwrap then and using a torch cook that side. Then I re wrap with gloves while the strips were still soft and pliable. Did I overreact? Or how do you get the side of the bacon that faces the pepper or onion to cook like the outside?
@@Armadillopepper Maybe it was the time, cooked it for a little over an hour. Next time I make them I'm going to hit them with the blow torch for a bit.

Any suggestions as to temp & time for cooking in air fryer? Or in conventional oven?
I don't use an air fryer or oven. Temp for oven 275 to 300, but need a way to make sure the bacon drippings don't get on the heating elements.

@@Armadillopepper I cooked the poppers at 250 F. I have a BBQ Guru Temp Control so the temp is really stable.
