  • Keto Rice Pudding (Arroz con Dulce) | Christmas Recipe
    Yay, rice pudding! It is possible on Keto! My family always made it for Christmas, and it is just not the holidays without it. This recipe uses cauliflower and I will show you a base which you can flavour however you'd like. I'm using vanilla and cinnamon, which make it taste like our beloved Arroz con Dulce (Sweet Rice).
    I also use Xantham Gum to thicken the recipe. Let me know in the comments what flavours you plan to make!

    I just made this today and I’m not sure about your measurements. I love when people give the gram weight because I like to weigh everything. You said 1 1/2 tsp of cinnamon or 13 grams. I weighed out the 13 grams and holy cinnamon!! It’s more like 5g!! 😂. 1 C of cream you said is 120g and was more like 213g. I weighed out the sweetener but put less then the 100g that you said, but I never tested the weight on that one. Let’s see when it cools how it is. Mine was a lot more brown then yours because I went with the 120g of the cream, and so I ended up adding more cream to lighten it up. Fingers crossed! 🤞🏼

    The base good, but definitely the taste is not like the original! And for me, the worst is the cauliflower taste.

    it's not personal to this video but i feel like rice pudding is one of the meals that you can't make it keto. totally different tastes. only the same texture.

    Have u tried doing the tea: cinnamon sticks, fresh ginger and whole cloves?

    Why not sift the cinnamon into the pot and move it around as you sift for even coverage

    Can you add Ginger and clove to it like traditional rice pudding? Make the traditional tea?

      Hi! I can’t wait to try this recipe! Is the cauliflower already cooked? I have frozen riced cauliflower, do I cook it prior to adding it? If I do cook it, do I need to squeeze any of the water out first since it gets really wet once cooked? Thank you!

      Denise Sobel I like to use fresh cauliflower rice, but you CAN use frozen cauliflower rice. I would suggest just heating it in a pan (straight from the freezer, nothing else added) over medium heat just until it has broken down and is no longer frozen, then add it in as is - no need to dry it. 😊

      P.S. as it’s cooking in the coconut cream, you are cooking it until it is tender but not turned into mush, so it will take 10-15 minutes once the cauliflower has been added to the coconut milk. If this is still to hard for your taste after it’s been cooled and set, you can add more cooking time the next time you make it. It is completely adjustable to your tastes.
