My Dad, Mom, me and my four siblings would stop at the Syosset Bakery almost every Sunday after mass at St Edwards and we'd get crumb buns, kaiser rolls and jelly donuts. Such a magical memory. the taste of the crumb buns was beyond and I will never forget it. PS I ended up working at the Syosset bakery as a teen! Cannot wait to try this recipe.!!!
I live near a famous bakery in NJ that makes crumb cake with the biggest ratio of crumbs to cake. It's the way!! We are spoiled over here in the tristate. Thankful for it. Also gotta lose weight from it but sometimes it's worth it. lol. This looks amazing -- and love, love the Taste Tester always. He is adorable and I trust anything he says.

Oh man, this is embarrassing but I've ONLY tried crumb cake in the form of Entenmann's crumb cake donuts, and I haven't had them since I was a kid, but I remember loving them. Those and the devil's food cake crumb cake donuts were my favorite. Definitely wanna try this!
Now, those are delicious - my mom and I are notorious for eating one crumb cake donut with tea, and then saying "that tasted like more" and helping ourselves to *at least* another half donut. But a crumb cake like this, it's amazing. The texture in the crumble is fantastic.

This looks like what my Mr would call coffee cake- it's one of his all-time favorites! I appreciate the proper crumb topping ratio you have there. I'd probably make it with some cardamom. And maybe some apple in the cake layer....
I appreciate the imperial and metric measurements, but this is a great example of why I really don't bake. I tend to use recipes as a guide which works when I am making lasagna or chili. However, baking requires more precision to get the expected outcome. Fortunately I have an excellent old school Italian bakery around the corner from me on the Jersey shore.
Growing up on Staten Island in the 60’s I worked night shift and on Sunday 5AM I would always stop at the corner bakery and get crumb cake but with iced, I’ll have to try this to bring back those old memories.
To duplicate cake flour for every cup of all purpose flour remove 2 tablespoons and replace it with 2 tablespoons cornstarch, whisk together well before adding. I make my crumb the same way, it’s the best. I wouldn’t do the flip, just make the parchment hang over the edges and lift it out.
There is a very similar recipe from polish cuisine - yeast cake (drożdżówka/drożdżak/ciasto drożdżowe) and I guess you know the origin of the name. Anyways, what I want to point out that in order to have more crunchy crumb, you can replace the flour with Semolina or (if you have access to Polish products) Krupczatka flour. The end result is really subtle but worth giving a try!

Liquids, such as buttermilk, is measured in litres or millilitres ( L/ML ) and dry, such as flour, is in weight (grams) which you have a handle on already. Measuring spoons - a teaspoon is 5 ml; a tablespoon is 15 ml. One pound of butter is 454 grams.
My Dad would go to the deli on Sunday morning and get an Entemann's Crumb Cake (sometimes the Butter Cake!) and it was a family favorite. Sadly they're not available out in the hinterland so I was pleasantly surprised to see your recipe in an email. I am glad to have the video now because my first attempt didn't go so well. Entennmans original crumb cake was different than now. They used to make a yeasted cake, which is a traditional crumb cake. Andrew’s German Bakery in Staten Island, NY was the best! Brings me back to my childhood. This looks delicious! I will be making this. ❤
I experimented with a yeast cake but couldn't get it right. Truthfully, as I said in the video, one could use a yellow box cake mix and just make the crumbs for this recipe.
A tip for the baking paper: if it's too big for your tray, get scissors and cut at each corner diagonally towards the center 1-2 inches. Then just drop the paper onto your tray and the corners get "wrapped" without having to fold the paper. Try it and you'll see what I mean- it's hard to explain. I promise you wouldn't be chased anywhere. Some of the most legit bakeries in the tristate that are known for crumb cake do exactly what you're saying. Famous bakery by me that makes a crumb cake with raspberry jam between the crumbs and cake -- it's my favorite. Adds a great acid to all that sugar and fat.

NY crumb cake uses a yeast cake not a baking powder cake. It needs the structure to support the crumbs. The crumbs are really hard to make without them being too sweet. It’s good to see the amount of flour used. I think I’ll try this crumb recipe

Instead of adding more flour to the crumbs, try letting it sit for a few minutes so the flour can hydrate. That way you don't throw off the ratio
