- This week I've got some super budget-friendly, affordable family dinners for you! The first two are PERFECT for family comfort food and definitely kid-friendly. And then we have the star of the show...the Subbie Supper. WOW. One of our favorites to date, for sure! I hope you enjoy this What's for Dinner!!

RECIPE FOR SUBBIE SUPPER - Submitted by Cathy
4 pieces of chicken (could also use boneless, skinless thighs)
1/2 cup Shredded Colby Jack Cheese
Marinade:
1/2 cup water
3 Tbls. Lime juice
2 Tbls. Soy Sauce
1/2 Tbls. Worcestershire Sauce
3 cloves garlic, minced
1/4 tsp black pepper
1/2 tsp onion powder
1/2 tsp garlic powder
Mexican Ranch Dressing:
1/4 cup ranch dressing
1/4 cup sour cream
1/4 cup salsa
1 Tbls lime juice
1 clove garlic, minced
In a ziplock bag, combine all marinade ingredients with chicken. Refrigerate and marinate for at least 8 hours and up to 24 hours. In the meantime, prepare ranch dressing and mix until smooth. Refrigerate.
Remove Chicken from marinade, and Grill or use a stovetop grill pan to grill. When chicken is thoroughly cooked, top each piece of chicken with some shredded Colby jack cheese and the Mexican ranch dressing. Serve immediately.

Oh my goodness when your son said 'no way this is legal, this is too good' melted my heart lol! I wish my kids ate as good as yours does! He pretty much eats almost everything you make! And seems very appreciative of it!

I'm sure ya'll get along most of the time, but your relationship on your show is priceless. Steven is definitely an integral part of the show, and would not be the same without him. And you are so appreciative of his participation and how considerate he is of helping you cook sometimes, and of course that he is such a good taste tester. I can't wait to try these brussel sprouts.

I love it it's how my family talk. My mom is from Tennessee. My dad was in the ARMY never lived in South however because mama taught me how to talk I have a slight southern accent

Sloppy joe casserole. This I have to try. Also a new way to do Brussel sprouts. I think I could make a way for that to work in the oven. I do t have a airfry..

I can hardly wait to try these 3 recipes. I did the Kielbasa and Hash Brown Casserole for church today (6/10/24) but I chopped two bunches of green onion and 1 tsp minced garlic and 1 cup of grated cheddar cheese and baked for 30 minutes and then added 1 additional cup after the initial baking and then added 1 more cup on top and placed it in the oven for an additional 1o minutes.
A major win yesterday when I made the Brussels Sprouts. Husband wasn't sure of them since they didn't have any bacon. He kept talking about how much he enjoyed them all day!
It’s always a good idea to cook your flour for a minute or two to get the flour taste out before adding your liquids. To make a nice fluffy Spanish rice, after it comes to a boil, I let it boil about 2-3 minutes lower heat to real low, cover and cook 10 minutes, then turn off and let sit covered for 10 more minutes…😮
My late husband's favorite Hamburger Helper was the Cheeseburger Macaroni so he would have loved this. He LOVED to eat!!! Which was great because I love to cook!!

Hi Mandy! I love your videos. I know this is an old one, but I hope that you can benefit from this tip! I lucked out and I learned how to use my instant pot from someone who had already been using it. I can tell that you are scared of the steam that comes out when you release it… The best thing to do is when you release it you throw a kitchen towel over it. Not only does it help keep it from being so scary, it helps keep from steaming up the kitchen. Keep up the great work! Your whole family is lovely! Best, Kris
I’m making all of them. But I don’t have a instapot and I could work around that. That steam scares me!! When I make beef stroganoff I use thin slice sirloin, freeze it, then slice it thin. Never used ground beef. But I will. Steven we love you! Nothing like a man in the kitchen. Cole is a handsome young man. AND sweet and polite. We all notice! ❤️❤️💙🐈🥑🍔🍕

My older son doesn’t like mushrooms, but I still put them in the recipe, and he picks them out. That works for him and he puts them on my plate. 😊
I use parchment paper rounds in my air fryer to prevent sticking and the mess. I get them from Amazon. They are great!

Do you ever give her any cat treats during the day to hold her over until dinner at 9pm? You might want to so she does not have to wait 12 hours between breakfast and dinner. I make a sloppy joe casserole similar to this but I make my own "Manwich" and sub a can of Rotel for diced tomatoes and it is inCREDIBLE!

I definitely want to make that beef stroganoff, I don’t have an InstaPot so I’ll have to work around that but it looks SO good! That’s my favorite Hamburger Helper as well but it’s just so salty so I figure making it myself will be even better!

Just a tip on the beef stroganoff. I prefer not to use ground beef...reminds me of hamburger helper and I lived on that growing up. As a 30 something adult I prefer to use either round steak (cubed) or using stewed beef and the recipe i use, uses egg noodles and I split beef broth and a dry red wine it takes the stroganoff up a few marks

I made the sloppy jo casserole tonight and oh my goodness. I did cha ge one thing. Instead of the Velveeta cheese I used an entire jar of the ragu cheese sauce, as I could not find the other anywhere near me today. My husband is a cheese fanatic that is why I used the entire jar. Thank you for all of your videos!

My favorite hamburger helper is the cheeseburger one with a half tsp of mustard added. I also love the best choice brand lasagna!! Has to be best choice brand. Not a fan of any actual hamburger helper brand ones except the cheeseburger one...and only with a little bit of mustard added. Lol Sooo yummy!!
I watch your videos not only for the recipes but because of the relationship you guys have. Hi Mandy! I have been watching for a while. For a short time you had the camera in Cole's spot, but I guess that displaced Cole from his regular place at the table. It would be nice if Steven could hold the camera and capture your first bite - after his first bite of course.

That fiesta lime chicken sounds really good and the sauce sounds amazing. I like your rice recipe too although I might add a little bit of chopped up grilled red peppers from a jar or some green chilies just to make it mine I suppose.
