Thank you for this recipe! We used to have the McVities version all the time when I was younger. I made this cake this evening and my mam (who's not a big cake eater) had a taste and then ate two slices in one go!
I’ve made this three times now! The latest one I added the zest of an orange to the syrup at the start of the boil. Took the cake “to another level” as they say. Next time will probably try a little zest in the cake mix as well.
Hi there I baked the jamacian ginger cake/loaf yesterday and it was a triumph. For some inexplicable reason I added ½ teaspoon of baking powder instead of the recommended ¾ teaspoon of bicarbonate of soda and expected an issue with bake. To my relief and surprise the cake/loaf was well risen, moist, dark and really unctuous and the addition of the ginger syrup over the top raised the finished bake up a notch. Thanks for an easy and informative video and your enthusiasm shines through.
Has anyone noticed when Sally cracks eggs she does it like a Disney princess? This cake looks phenomenal! Can't wait to try it! Am 36 weeks pregnant and baking all the things, I'm calling it nesting haha! All these videos are class!
Living in Australia for 20 years and they don't have the jamaican ginger cake I used to eat back in Ireland when I was younger. Just made this and its exactly how I remember it. Thanks heaps!
Oh I love ginger bread. I make it a lot. I can smell it now. Sally your bubbly personality is so refreshing. If you were a wine you would be champagne lol
Thank you for the recipe, I made the loaf and it came out beautiful!!!! I halfed the sugar too and you can taste even more heat from the ginger flavour. I heated it in the microwave and have it over coffee...just delightful ☺
I made this on the weekend and it turned out so well! I'm in Canada so I used molasses, and I couldn't find golden syrup anywhere but found a recipe online and made my own. I also baked my loaf at 325F for 60 minutes and it was done (any longer and it would have been overdone). Hope these tips help others out there!
I made this and it was lovely. I did do the sticky syrup but to be honest I would prefer icing sugar. It was great buttered and as a pudding with custard
Made this cake and it was the best ginger cake ever. I put some of the syrup over but was cautious in case it was too soapy but I should have put more. We had it with butter and custard. Lovely. I am making it again this weekend. Will try and take a photo but technology may defeat me. Make this cake you will love it
I’ve just made this, OMG, it’s fabulous, that ginger syrup is to die for, the whole cake goes nicely with some cream poured ontop. Thank you for sharing your knowledge and experience with us. I kept some syrup and later added some to sparkling water. Yummy. ❤️
I got really, really close to my iPad while I was watching this and I think I could actually smell the ginger. It was glorious. Then my roommate walked in and I did had to try to explain why I was trying to snort my iPad. I don’t think she understood how much I really wanted to smell that cake because she went over to the other side of the room, grabbed her iPad from its stand, and slowly backed out of the room. Oh well, I enjoyed imagining the smell for a minute or two and she’ll get over it. 😂 Great job on the cake, Sally. Thanks for sharing that with us.
Thanks for posting the video was so helpful ☺ I made this tonight but did it with gluten free flour and soya milk 🥛 didn't use the treacle in it and had brown sugar instead followed the steps and turned out great and my kitchen smells amazing 😋 xx
I'd made this cake for my Dad, few days back, to celebrate his 57th Birthday. I was kinda confused if we would like the taste of it or not ( since it's kinda different than general cake flavors). Now I have to say, THANK YOU SO MUCH to CupcakeJemma & the team members for this amazing cake recipe!! This 'Jamaican Ginger Loaf Cake' is worth to try. Love & best wishes from Bangladesh!!!
I made a ginger cake yesterday..( not this one but a family recipe ) the method is almost identical but I add 1/4 teaspoon of cayenne as well as 2 teaspoons of ginger. and allspice as well as the cinnamon.. I used a traybake tin … lovely with custard when it’s a few days old. Or with butter on …I don’t put a glaze on. 😊🇬🇧
I ordered the apron kit finally, been wanting it for ages. Decided since we are baking more now that we are home so much... This cake sounds to yummy!!
Caster sugar is finer than regular Powdered sugar is well in powder form but it also has extra constancy to prevent clumping Refined sugar is the same as regular I normally use regular sugar in recipes that call for it but also in recipes that call for caster as they are so similar And powdered sugar is used in icing and American butter cream Hope this helps!

I made this cake and it was lovely. I used a spiced pumpkin syrup for the drizzle as I had been making turkish pumpkin dessert . I will make this cake again.
My mum used to get the shop bought kind, slice it in half and fill with cream and bananas wirh lemon juice over them. Top with same.. delicious desert.
I am the worst baker but I gritted my teeth and gave it one more go. Perfect recipe 👌 My cake looks exactly the same as yours and it's delicious. Thank you 😊
I had a go at making this yesterday and it is soooooo tasty. I am a total novice when it comes to baking. So I was so giddy that it turned well and edible! 😅 I'll be giving your carrot cake a go next. Love these videos x
I made this for the first time today and it turned out wonderfully! This is an absolutely perfect recipe, doesn’t need any tweeks, it’s very easy to make and the cake is so yummy with a lovely sticky, chewy top. Actually tastes very, very like the McVities version. I’m delighted with this simple recipe and classic caje which is now part of my repertoire! I didn’t make the syrup, but I don’t think it needs it, but I will try it next time, if I can find fresh ginger.
Made this a few days ago and it was delicious! Had no treacle so just used golden syrup and reduced the dark sugar just a little as well. Skipped the drizzle but it was perfect with a nice cuppa tea. It was all finished within a few hours!
I adore your channel and recipes! I do struggle with trying to convert from convection (fan) Celsius to standard oven, Fahrenheit. Is there a simple trick to this conversion? If so, it would be so helpful if you included this additional bit of information in your description for those of us not fortunate enough to own a convection (fan) oven. I wish all of you the merriest holiday season ever! 🎄🎅🎄
Just made this. Thank you so much. I love this recipe, it came out perfectly and it tastes so good! It reminds me of the McVities Jamaican Ginger cake.
You guys rock. I wished I lived in the UK and worked for you. I would be in heaven. Former chocolatier tired of doing IT Data Architecture work. Food is the best medicine.
I’ve made this 3 times now...love it! Always seem to have enough mixture to make a few cupcakes which is a great bonus:-) thank you. Making yul log later in the week.
Making this for my 89 year-old grandma today. I'm separated from her right now because we don't want her to get sick and I miss sharing bakes with her. Can't wait to share this special cake recipe, I think she will flip!
I am Jamaican and I love this . I don’t have ground ginger can you please tell me how much fresh ginger to use and should I grate or shred it I want to make it today?
Hi Sally, would I have to reduce the cooking time if I halved the mix into two smaller loaf tins or even into cupcakes? Love watching all the videos. You are all fab!
Yes definitely. Cupcakes for a banana bread recipe are about 20-25 mins but definitely keep checking with a skewer. I'd check at 30/45mins for half the recipe
Try it with a slice of cheddar cheese! I like the sweet 'n' saltiness of this incredibly rich combination! Thank you bringing so much joy to us in these tricky times!
Sally Dells Hi Sally, thanks so much for taking time to reply! Give it a go and let me know! Try a medium cheddar - nothing too strong! A crumbly white cheese can be great with fruitcake ... always a winter favourite with me
Hi Sally!! 1st can I say what an amazing job you are doing! Get it girl 😘 2nd do you think you would be able to put some chunks of crystallized ginger into the cake batter? Xxx
@@mindfulbaking and dust them in some of the flour before mixing in, this helps them not sink. Crystallised ginger in ginger loaf is very decadent but really yum!
Looks so good! I love ginger! I do enjoy your tutorials too! I am hoping for some more of those New York cookie recipes without chocolate! Maybe peanut butter and or oatmeal?
I'm gonna make this tomorrow but I'm using a rum syrup to top the cake off and some crystallized stem ginger in the batter mix. Some whipped cream with a teaspoon of vanilla extract on the side . Unless I leave the cake as a ginger cake and make the cream a rum flavoured Chantilly cream? Decisions, dcissions...lol Thanks for the recipie, just what I was looking for.
Looks absolutely delicious.😋😋😋 Love ginger cake ,trying this tomorrow. Wonder if it will taste as good with molasses? I have no treacle or golden syrup.🙁
It might not taste quite as sweet but that isn't necessary a problem. The molasses will change the flavour a bit overall as it's a stronger taste than either treacle or golden syrup but the recipe will still work. If you have any corn syrup, I'd play it safe and sub molasses for the treacle and corn syrup for the golden syrup. But all molasses will still work!
I found another ginger cake recipe online recently and made it today. Unfortunately, I didn't find it that easy to make. There was too much of it and it filled my loaf tin right up to the brim (in hindsight I shouldn't have poured all of it in). When it was done, I left it on the side, but took it out of the tin too early (it was still quite warm) and the bottom got stuck in the tin because I didn't bother to line it, just generously butter it. It tastes quite nice, but, it's a bit crumbly. It might be better by tomorrow. After seeing your recipe, I thought I would try yours as it seems easier and there is less of it and the mixture appears less sloppy.
Hi Sally. Wonderful recipe! Will def try it. :) However, I had a question. Why does cakes crack on top? It happens most of the time to me. I noticed yours did it too. While I can just level it off, but I would really like to avoid it. Please let me know :)

""A first class lesson , great recipe , have just put one in the oven many thanks ,and regards from Dublin.""
Hello! Can you pls teach us the difference of sugars (caster, powdered, refined, regular, etc.) and when to use them? Thank youu
Caster sugar is finer than regular
Powdered sugar is well in powder form but it also has extra constancy to prevent clumping
Refined sugar is the same as regular
I normally use regular sugar in recipes that call for it but also in recipes that call for caster as they are so similar
And powdered sugar is used in icing and American butter cream
Hope this helps!
Here are more specific descriptions:
Coarseness (for coarsest to finest)
-Demerara sugar/muscovado sugar
-brown sugar, light or dark
-granulated sugar, or regular refined sugar
-caster sugar (British) /superfine sugar (American)
-icing sugar/confectioners sugar/powdered sugar
Flavour profile:
Demerara, muscovado, and brown sugar = molasse-y, caramel-y flavour and makes things chewy
Granulated/caster/icing sugar = flavourless and helps things spread
Use of sugars:
demerara, muscovado, brown = generally used in spiced baked goods or streusel toppings
granulated/caster = used in regular baked goods and as a common sweetener
icing = used in macarons or icings
Ingredients:
light brown sugar = white sugar + a little molasses
dark brown sugar = white sugar + a lot of molasses
icing sugar = white sugar ground finer + cornstarch
Hope this helps :)
