- It amazes me how some food smells bring back memories. Whenever I smell someone baking gingerbread cake now it reminds me of walking home from school and entering the house to the smell of gingerbread cake my mother was baking. Oh it takes me back. Happy memories!
This recipe makes two cakes so refrigerate the second one (up to a month) or share it with family and friends. It's super easy to make, two pans and a bowl and the most moist, delicious, fragrant gingerbread cake I think you will ever have tasted. Try it. Link to the treacle and golden syrup below (but as say in the video, you don't have to use these)

The Recipe -
Gingerbread Cake
Makes two 8” round ginger cakes
1 lb flour
8 oz butter
4 tsp ginger
2 tsp cinnamon
2 tsp pumpkin spice seasoning (mixed spice)
2 tsp baking soda
8 oz golden syrup (you can use corn syrup)
8 oz black treacle (you can use molasses)
20 fl oz milk
10oz sugar
3 eggs
Preheat the oven to 350 degrees F.
Add the flour, ginger, cinnamon, pumpkin spice seasoning, baking soda to a bowl and rub in the butter to fine crumbs.
Whisk the sugar into the milk and bring to a boil in a heavy based pan and at the same time bring the syrup and treacle to a boil in a sperate pan.
Whisk the milk mixture into the flour mix followed by the syrup mix. Add the eggs. Pour immediately into the cake tin and bake for about 20 - 25 minutes or until a toothpick inserted comes out clean.
Allow to cool slightly before slicing.

Growing up in the UK, with my Grandfather being a baker, ginger cake was a regular treat. Sometimes the oven was left too hot and the top would be a little scorched, but custard soon covered that. I inherited his baking abilities (taught at his side, standing on a chair, wrapped in a big, white apron) and many years later made a couple ginger cakes for my parents. We knew that leaving them for a week was beneficial, so the fact that they took that long to arrive in the UK by mail, from New Zealand, didn't matter. What mattered was that at that Christmas, everyone who wanted, had a piece of cake that I'd made especially for them!
What a great memory 🙂
My mother never encouraged me to cook! Yes my sister but never me! I’ve spent my life avoiding cooking both for myself and others. Since I found your website, I have followed some of your instructions and it’s been fun x
Kay Morrice, I can relate to that one too. I was an only child but my mom never took the time to teach me how to cook. I took home ec, but I just never felt comfortable enough to cook either.
@@kimholcomb6943 yeah it’s a disgrace really!
Goodness me.... My mouth is watering, just wish the piece of ginger cake is in my mouth instead of in chef Darren's 😂😂😂
Been there, mom didn't teach me but I've discovered that I LOOOOOOOOOOVE cooking. Have gotten comfortable making a few recipes of my own, over last couple of months.
@@mayhembeading3737 Brilliant! Go you xx
I've never tasted gingerbread cake before, but I did enjoyed gingerbread and ginger flavoured cookies. I actually can imagine how the sweetness and spiciness of the cake enhanced by the saltiness and creaminess of butter just melt away in your mouth with a glass of warm milk. Divine!
Dear Mr. Grady, I lost my mother a few years ago, and I can still remember the flavors of what she made, and she made the best gingerbread for us, and I loved it when it came out of the oven all nice smells. Such rich the flavor…. The smell-of spice and the smells cinnamon and molasses just added more to the days . Youtake care of yourself, sir, and be healthy, and be blessed
One of my favourite types of cake
Love your videos Darren. The stories you tell that accompany the recipe are fabulous. I’m an American, born in Canada to English parents. I grew up on many of the same dishes you cook,,,,certainly not as great as yours. I’m retired now from a long career and love cooking as a hobby. Your videos are wonderful and charming. Thank you for taking the time to share.
This ginger cake would be a lovely Christmas gift.
This cake is definitely worth a try this holiday season. Thank you Chef Darren
Hi pretty lady. How are you doing today? And how is the weather over there?
OMG, with a nice cup of tea! Bliss.
Such a Sweet Story about Your Mom. 🥰
Another happy childhood memory - this was my grandfather's fave with butter of course, and cup of hot strong afternoon coffee. The fragrance of this cake must be sublime!
Merry Christmas!
How easily memories get forgotten in all the Dailey bustle. And how wonderful they can be brought to life again by a reminder to jostle a memory. I can smell the warm ginger cake and the butter melting on the warm slice. Even as a kid we drank a mug of tea. Thank you for sharing your video and this heartwarming receipe
Yea it is the return to white chef jacket 🎉😂 Ah Chef Darren you are jumping technology here with smell-a-vision. Ginger cake or Gingerbread, same thing just called different things in dialect English. 😜🙃 I love this recipe because of the memories, the smell, and no matter how you call it the wee bit of butter on it before you devour it. 😋😋 Yum yum.
I love ginger cake!!!! With a bit of melted (warmed) lemon curd... heaven!!!
That was my first thought that lemon crud would be amazing with it
This sounds great. I love gingerbread. I have never had it in a cake form, but it's got to be just as delicious. Thanks for sharing!
Ahhh Darren. Good to see you looking well. I watched your Chocolate biscuit cake vid last night. I've watched tons of your vids but not tried making anything.....untill now. I've got the recipe for the chocolate biscuit cake saved and will be giving it a go very soon. Keep up the awesome work.

The most perfect Gingerbread cake! Baked it two days ago. I used golden syrup and molasses. It’s fast and easy method. Thank you so very much for this recipe and yes with my fave Kerrygold salted butter and a cup of hot Earl gray tea with milk - amazing!
Hope to see more cake reciepes .
Wonderful, sticky, spicy gingerbread cake. So good.
One of our favorites! A true Christmas standby...Thank you!
Thanks Darren I'm going to try this recipe.
It looks delicious! I make a more Scandinavian kind of gingerbread. I've never tried the salted butter on it, we usually put whipped cream on top. 🎄
Merry Christmas to you and your family! ❤
It looks moist, which is how I like cakes!!

Thank you, Chef Darren! I make this cake yesterday and it turned out great and delicious.
Gingerbread cake sounds so good too! Never thought salted butter would go great on a gingerbread cake. Will have to try it sometime.
One of my favourite cakes.
fantastic cake, made it twice now, everyone loves it, friends, family, neighbours, thank you Darren 😀
Love the look Winston is giving you in the background wondering where his is . . .
Thanks Darren, we made a lovely home-made ginger cake thanks to your recipe
Mmmmm...I adore gingerbread and cake 😋😋😋
Mr. McGrady, you make baking and cooking look so easy! You are incredible. I always thought making a Christmas pudding was so complicated until I watched you do it! Wow! So easy! I will certainly try it!! Thank you 🙏
Its so yummy😋recipe Thank U so much Chef 🙏
Bueno, vi el video y ya lo preparé, es un verdadero manjar!!!
I made your Ginger Cake recipe for the holidays - it is absolutely delicious! Everyone loves it. Putting a little butter on a slice is better than any icing could be. Thank you for sharing it!
@Darrenmcgrady1965 Hi, I enjoy your UA-cam Channel and look forward to your posts!
@Darrenmcgrady1965 oooohh - I’ve been selected to receive a gift?! Wow, thank you!
Thank you so much for sharing this recipe. I have been craving warm gingerbread cake with hard sauce.
Looks Delicious, thanks for the recipe, I will make one for the holidays but will add some raisins
This looks delicious!
Merry Christmas, Darren, that cake looks truly scrumptious, well done! 🍰😋🤤
I made this last night as an alternative birthday cake for my daughter today 😊🎂
OMG! So delicious ❤💚❤️🎄
Happy holidays Darren marry Christmas to you and your family 🎄❤️💚🎄💚❤️❤️💚
Kia ora Darren from NZ. This is very similar to my Nana's Ginger loaf recipe which I still bake regularly. Only difference is my recipe would be equal to half yours - ingredient wise. Also I bake mine in a loaf tin - which makes for easier slicing. But you are right - the smell of ginger 'cake'/loaf in the kitchen - is to die for. I always like to have a cake or loaf in my tins, and was going to do a Madiera cake today - you've changed my mind lol. Ginger loaf it will be.
LOVEE this idea thanks so much for amazing brilliant year 🎄💚❤️💚🎅🏻
I'm going to try this, thanks 🙏
So wholesome❤️!!!
*broken record* You are too adorable for words! :)
I am virtually smelling your cake here! I'm definitely making your recipe this weekend chef. What size cake tin please? 🤔 🙏👍
Amazing can’t wait to try…
Best ginger cake I've ever tasted 😋 😍
Thank you 😋
I grew up eating freshly baked ginger bread. It did smell wonderful. I loved it warm with whipped cream. Does Winston like gingerbread?
Looks delicious,
Got me crying on this one….. story’s of Gram…..
How did I miss this Video 😮. Yummy 😊
Merry Christmas
This is similar to my mother's gingerbread recipe which made a smaller amount and was cooked in a loaf pan. I never thought of butter on it. We had it with whipped cream or a warm lemon sauce.
Lemon sauce?!
@@ellenekanem Yes. A clear, cornstarch based sauce with lemon juice for flavoring. My mom also made a kind of carrot pudding, similar to carrot cake but denser, which she served with the basic sauce. Sugar, cornstarch & water cooked till it thickens, after which a touch of butter and lemon juice or lemon flavoring are added. It is served warm over a warm dessert.
@@annalisette5897 Cool. Thanks a million for sharing.
I saw your vidéos by coïncidence, I am wondering why your vidéos do not have millions of views while your content is really interesting,
If I can offer the most gentle piece of constructive criticism: It seems the final edit had some sort of dark filter effect? Sound is all there, the picture's there it just seems a few shades darker than it should be. Regardless this looks absolutely delicious and I'll be making it. I love gingerbread *anything* :)
this has been going on for the last several videos, either too dark or oddly blown out saturation making Darren look orange. this and the general pacing of his videos makes me feel like his video editor is somewhat amateurish. Darren deserves a professional.
Thought so too! Thought my screen was conking out on me
Yup, the exposure is too dark
Thanks for clarifying this, at first I thought it was my eye's since I've been having issues with them (health wise)! What a relief!!
@@easterntrees It used to be his Son doing the cameras and editing. Might be a new guy
When I cooked up at Scout camp in the summer, I used to make this once each week (Three 18x13x3 pans), served with whipped cream dollop on each piece. It was always a hit with the campers.
A french tradition for Saint Nicholas. It was my Xmas kids cake too
Omg ! I’m just baking these cakes tonight, and even the raw batter tastes divine ! I am sat looking at the oven waiting for these bad boys to be ready ! So excited ! Thanks 😋👍🏼🇬🇧
Mmmjammy mouthwatering 👌 😋 Love the way you made it! ✅ 💯 New subscriber here 💪
Treacle and golden syrup, you can substitute molasses and white syrup. Tastes as good. Almost. 🤣🤣🤣 This American better buy the right ingredients so it tastes better than almost good!!!! Enjoy your videos.
That cake looks delicious! I love gingerbread, cake anything! I wonder if I could use a bundt pan in lieu of a spring form as I don't have one. I guess I would have to adjust the baking time.
Grease the pan, that’s what I’m doing with parchment on the bottom!
Can I add a lemon sauce on it? Would that be good! Merry Christmas!
Just made one, i did it part your way part mine, what i had on hand, put in more ginger spice!
Why do people make comments about salted butter always bought ours salted from childhood to now, actually didn't even know about unsalted butter until a few years ago! Asked hubby because his family had a food shop and he said there were customers who asked for unsalted! I always thought butter was salted from when they first started making butter to preserve it! Anyway i tried unsalted didn't like the taste at all, i guess it's what you're used too!
Hello, chef Darren! Thank you so much for your recipes. I'm not very experienced in baking a cooking and usually I mess everything up when it comes to the oven. Can you share with us what option/function of the oven you use for baking? Do you use the fan?
YUM!
Salted butter on top! I was thinking cream cheese frosting would be amazing:)
Yumie xx 😊xx
Sometimes l add chocolate chips and dried cranberries 😋😋
Even when my brightness is turned all the way up, your videos are very dark
Salted butter on top!!!
You are a treasure.
I'll definitely try this! Could you make mince pies? I've yet to find a recipe that is easy and for some reason the short crust always ends up too dry.
I must try this. Can you freeze the spare cake?
Is this like Jamaican Ginger? I love that
