400g Fresh or Frozen Raspberries
225g Caster Sugar
Cupcakes
125g Self Raising Flour
125g Caster Sugar
1/4 tsp Bicarb
30g White Chocolate Chips
125g Soft Butter
2 Eggs
1.5 tbsp Milk
1-2 tbsp Raspberry Goo
Buttercream
285g Softened Unsalted Butter
450g Icing Sugar
130g White Chocolate
Raspberry Goo
Milk to loosen
Chocolate Bark
100g White Chocolate
Handful Freeze Dried Raspberries

Looks so amazing! Id love to make strawberry filled ones! Ive never used self rising flour for cupcakes...always all purpose or cake flour. I always add a little oil or sour cream too. Sour cream in cakes is absolutely delicious! Our apple corer is just a regular, plain Jane one - we do actually sell them on our website!

Love your cupcake recipes!! Which brand and what number of the piping tip is that that you are using in this video? And when you use powdered sugar in your video or at your bakery, is it one with cornstarch or tapioca flour??
Powdered sugar is icing sugar or confectioners sugar
@@melaniekennerley6401 Yes, I know ! I meant icing sugar! ( you can use those three words interchangeably!) I was wondering if they use ones that are mixed with cornstarch or tapioca flour (latter is usually organic option). They usually react slightly different 😉

Just a quick question. The Raspberry Goo recipe is different to the previous one...do I use 125 or 225g of Caster Sugar? The previous video said 125g. Thank you ❤
hello! just letting you know, it would be 225g sugar because it's with 400g raspberries whereas i think the other videos use less raspberry :) hope this helped!

I have some questions and this is the only place I know how to reach you. I recently bought your cookbook, but because it was overseas my husband had to go through Amazon I was not able to get a signed copy. #1 I was wondering if there was anyway that you could send me a signature that I could put in my book. #2 As I was reading through the cookbook I noticed that the sticky toffee cake has marmite in it. I believe that all I can get a hold of is marmite spread. Will that work? I really love my book and I am looking forward to making something soon. Last summer I made your roasted Strawberry mint cupcakes, but forgot to take a picture before I took them where I was going. Last question, I am wondering if once the cakes are done do they absolutely have to stay in the fridge while not being eaten.

I found that the batter makes 12 cupcakes, but the buttercream is probably enough for nearly twice that many….either I’m being stingy with the amount of buttercream per cupcake (I don’t think so!) or you could make double the amount of cake batter…..
