It's instablock. If you time a block correctly you can do a double swipe with triangle as a followup.

as a new player, I don't understand how you make a punch with a jerk, when I make a jerk, the character makes 1 punch with a long animation

Pressing low thrust after guard dash does a shield bash which has the long animation but pressing high thrust does the triple poke leaping thrust

What is that basic poke that hits 3 times? Or is it just a fast xxx combo?

It's a move called Leaping Thrust and you perform it after Guard Dash and it's very good, esp for element builds. In Rise it was buffed significantly.

You forgot to add that leaping thrust has a natural minds eye to prevent your lance from bouncing on monsters. 😊
