& this is my creamy cheese stuffed chicken 😍
I absolutely love making this - it looks kinda fancy but it’s really not! It’s just such a fabulous combination of ingredients and it’s so easy to do.
The air fryer keeps the outside crisp and golden, yet the chicken juicy and moist, rather than dry. Nobody likes a dry breast.
Of course these are totally gluten free as always. Stick around for letter D coming soon, what’s it gonna be?!
Ingredients (for 2):
2 chicken breasts
3 tbsp cream cheese
½ tbsp fresh parsley, roughly chopped
1 tsp mixed herbs
1 tbsp sundried tomatoes, finely chopped
1 tsp garlic infused oil
Pinch of salt and pepper
2 tbsp gf plain flour
1 large egg
50g gf breadcrumbs
Method:
1) Butterfly the chicken breasts using a sharp knife.
2) Place each chicken breast onto a board with a sheet of clingfilm beneath and one on top of the chicken. Then pound the chicken using a rolling pin until much thinner - but don’t make holes in it!
3) Mix the cream cheese, parsley, mixed herbs, sundried tomatoes, garlic oil, salt and pepper in a small bowl until combined.
4) Lift off the top clingfilm and spread the mixture onto each chicken breast, half each of the mixture should be fine but essentially a thin layer not completely to the edges. (chicken breasts differ in size so you might need a little less or a little more)
5) Carefully and tightly roll up the chicken breasts and then roll up tightly in the clingfilm. Place in the fridge for a few hours to chill or easier still, in the freezer for about 30 minutes, until chilled and firm.
6) Remove the clingfilm and coat each rolled chicken breast firstly in gf flour, then in beaten egg, then in gf bread crumbs until well coated.
7) Spray the airfryer with a little oil, place the chicken in and then spray a little on top. Then air fry at 180C for about 20-25 minutes until golden, carefully turning halfway through. Check its cooked by using a food thermometer.
8) Serve up & enjoy!
Notes:
No air fryer? Cook in the oven, it will just take longer!
Change up the filling ingredients depending on what you like and what you have.

I wish it was, but chicken kyiv are filled with garlic butter and i can't eat garlic so can only use a little infused oil. its actually filled with cream cheese, sundried tomatoes etc :) but an honour you think it looks something i used to love eating and miss :D
