I make them but with imitation almond extract(totally different recipe), because my nephew is allergic to all nuts. They come out so good, so even when he's not around I still use the extract :)

I grew up enjoying these cookies from the italian bakery in Brooklyn. My dad always got them on Friday when he got paid. Such special memories.

These are my youngest son’s FAVORITE cookie ever! I’m actually flying to spend Christmas with him, his wife and my new grandson Luca! I’ll have just over a week while there before Christmas so I might just have to try this!

The jam is part of the flavor profile, so they wouldn’t taste the same.

THANK YOU SO VERY, VERY, VERY MUCH for making these!!!!! I LOVE, LOVE, LOVE ALMOND! I have a couple of questions.. Could I use Almond flour instead of regular flour so I can get even a stronger almond flavor? Also, there is this thick jam that is sold in a can here that is called almond paste. Sometimes I eat it with a spoon because it is that yummy. Could I use it instead of jam to stick the layers together? The paste itself is VERY sticky. Finally, can you think of a way that I could incorporate marzipan into this cookie /cake? If not, could you please make something special with lots of marzipan in it please? Thank you so very much!!!
I would not use almond flour instead of regular, they are not interchangeable. This recipe is going to have plenty of almond flavor, don't worry about that. Your almond paste "jam" will likely work but I can't know for sure without trying it. Jam is wetter and will soak into the cookie layers better. The log of almond paste in this recipe is nearly marzipan, they only have slight differences.
I think you could use almond flour, since the lift is coming from the meringue, that would probably be fine. I don’t know if the tiny amount of gluten development that comes from just incorporating the eggs with their small amount of water does anything for the structure… but I saw someone else’s comment that they use gluten free flour because of an allergy and that seems to work fine for them.
If you’re all about maximizing the almond flavor then you probably could use the almond paste in place of the fruit jams, but in my opinion the fruit flavors are an important part of the overall taste of the cookie, since the cookie has so much butter in it, the slightly tart and vegetal flavors of the fruit contrast with the richness of the butter, chocolate, and almond flavors to create a great taste as a whole cookie. If it were only almonds it would be an almond cookie! But of course whatever you like to eat the best is what is correct for you. Maybe if you wanted to use marzipan you could replace the chocolate on top with marzipan?

Nut-free almond flavoring and substitute regular flour or an alternative flour for the almonds.

These are very good BUT: next time I will use smaller trays because these were so thin they burnt 1” in all around- at the 12 minute mark! So watch out, if your trays are very thinly covered in batter, reduce the time by half!
I made this recipe for the first time today and didn't run into that problem. It is difficult to spread out but I managed to do it. Could be your oven runs on the hot side

Try using marzipan or almond butter (similar to peanut butter).

Definitely a labor of love. I was just in NY this weekend and grabbed a bag of these 🤩 one tip: grate the almond paste so it’s finer and incorporates well. I will be making these next week! I prefer the softer colors as you did John. Not crazy about all that food coloring.

I made a batch of these yesterday. The only thing I did differently was that I used some of the chocolate for the bottom as well as the top. They came out great. Enjoying them with some coffee with some amaretto added....the best!!
So after you chill one side, you flip and cover the other side with chocolate then chill again? Thanks in advance! 😊
@jessicayaviraskiba8933 Hi Jessica...it's been awhile since I last made them, but my recollection is that "chilling" wasn't actually necessary. The chocolate is applied when still warm so it kind of sets up without any refrigeration.

Thank you for this gorgeous recipe. Just wondering if I have a full sheet pan, would I double the ingredients or quadruple them???
My understanding is that a full sheet pan won't fit in most home ovens...if you used a half sheet pan instead of the quarter sheet pan you would likely just double the recipe...cooking time should remain the same but you'd need 3 racks to bake them at the same time and the temperature differences at all 3 levels could complicate the mess up the results

Mom would make one layer apricot, one raspberry. She also added chocolate to the bottom once the top set. Recipe is almost identical to mom’s. Only main difference is she made her own almond paste. Never used store bought. Always delicious!

In almond paset he mean marzipan? I never heard of almond paset before, I pretty sure we dont have that here, only marzipan..
Marzipan has more sugar, otherwise the same. You can use almond flour

I made these tonight and it looks like I may be throwing them out. I did the thin layer but maybe I overbaked them. They seem hard and are brownish in spots. This is only the second time I have made these. I used a different recipe the first time. I guess I should just not make these. lol
These cookies should be baked for around 10 minutes. I have made them multiple times and decided to try John's recipe but he has them cooking for 15 then additional 12 . 15 mins is even too much for these very thin cookies layers.

John, I want to make your version of these rainbow cookies. What is the size of the pan that is used to bake each layer. Is it a 9x13?
I also use seedless raspberry jam rather than apricot. My secret ingredient is adding a splash of Kirsch to the jam. Enjoy!

Just made this and not a chance that I could get enough to spread in three of the 9 x 13 sheets so I did two sheets. They taste delicious, think I’m going to look for smaller pans.

I followed this recipe exactly and for some reason, the layers did not turn out to look as high as the ones on here. Today I tried a different recipe and the same thing, the layers are so flat. Not sure what I'm doing wrong.
I have tried to make this 3 times, failed all 3. Ask my friends to try. Failed for them as well. Batter never rose in the oven. Even started to burn in a few spots in the first 10 minutes for all of us.

I just have a question whenever I bake these I never get them even the batter is always thin on one side I'm using a half sheet cake cookie sheet see that yours is smaller but I just have the question on any suggestions on why or how I can make sure it's level in my oven
Love your recipe, will definitely have to try it! We use to live in n very Italian area of Brooklyn, NY, where the bakeries there would call these cookies ‘seven layers’. So there would be a thin layer of chocolate on the top and on the bottom… hence 7 layers. Can’t wait to try this, love all your videos!!!! Happy holiday!
