You can use elderberries in elderberry tea, or an elderberry tincture, but the most delicious way to take it is in a honey syrup! In this simple tutorial, Caroyln shows the entire step-by-step process to making this natural cold and flu remedy, and even teaches you how to can it for long-term storage.
For those kiddos under 2 years of age, we also share our favorite substitutions for the raw honey so the little ones can still reap all the benefits of elderberry.

There was a time when my husband and i were both unemployed, we had two kids and were so worried they would get ill and we would need to take them to hospital, we had elderberry bushes in our yard i made elderberry juice with the flowers and elderberry syrup with the berries. My kids, husband and i never got sick while drinking it. It is truely an amazing plant and since then wherever we live, i grow elderberry bushes. Thanks for this recipe.

Elder used to be called the "Country mans medicine cabinet" because it has so many useful properties. The flowers make a delicious cordial and the berries make a nice syrup (high in vitamin C). When I was a boy, my mother gave us kids elder cordial/syrup all year long. Sadly, its not as readily available in stores now.

Elderberries grow wild here in MO. I bought some plants last year, they are beautiful plants, lovely flowers and pretty berries. In January you cut them back to 4,to 6 inches. Take the sticks that you pruned and poke them into the ground, or container. As long as you have 1 to 2 buds below the ground level and 2 to 2 above, they sprout and grow so easy! The flower heads smell so great.

Chaga mushrooms are an immune modulator. Cordyceps are an immune booster. You should get an immersion blender. I wouldn't waste any of the berry material. About a teaspoon of dried thyme might be a great addition to the elderberry syrup. It actually increases white cell counts. It makes a decent tea on its own, too.

I'm watching this as I make our third batch of elderberry syrup for this season.
I started making it with the elderberries from St Fiacres Farm I got in the bulk deal from your "Herbal Medicine Cabinet: Colds" class. My family loves it! My toddler had a runny nose recently and the run of that little cold was far less severe and she got over it quicker than we're used to. The older ones in the family have been taking a daily dose of the elderberry with the fire water and are also feeling the benefits. I've been able to up my doses when I feel a tickle and ward off any virus so I can keep caring for my family.
Last year we were paying for mass produced elderberry that did not taste very good. It wasn't that effective because I couldn't get anyone to take it!

Elderberries grow wild in the hedgerow here (England) - birds eat the fruit and deposit the seeds everywhere...so, they really are very common.
My mum always insisted that we had elderberry syrup in the house each winter when I was a child (~50 years ago) but you can't buy it now. Lots of the old remedies have disappeared off the shelves and you just can't buy them anymore.
As others have said: the elder is a really useful bush (it's called the country mans medecine cabinet for a reason). You can use the elferflower (around May/June) and the berry later in the year. It makes a very nice wine too!

If I were going to can this up, I would omit the raw honey. The heat from the canning would destroy the goodies in the honey. When you want to use it, just open the jar, pour it into a pan and heat it a little, then add the honey. Then you could take a spoonful and store it in the refrigerator.

My Elderberries are nursery bought. A Greenleaf Adams pla t and a Purple laceleaf. The berries are abundant but the plant is quite large, about 10' high and 9' wide. They also grow wild many places. Cuttings are easy to root and my plants are only.1 year old. You might e able to I quite of a local gardening group for cutting. I am making my berries into syrup for the coming cold and flu season. Ilivein Everett Waand will share cuttings if anyone is close enough to get them from me. Best of luck.

    4 cups of water
2 cups of fresh or 1 cup of dried elderberry
    2 cups of honey
    1/4 cup of lemon juice
Optional: cinnamon stick, ginger, cayanne or clove to taste
Simmer for 15 minutes. Should be a tea consistency. Strain out berries and spices. Pour juice back in to pot. Add raw honey to cooled juice for fridge storage. If canning use regular honey not raw.
If canning bring back up to a simmer and add to clean jars and water bath can for 10 minutes.

My Gran crushed elderberries heated then to almost boiling then tipped them intio a large mason jar with equal weight of suger and the whole rind of an orange that had been browned under the grill a small piece of cinnamon and 3 cloves. Then topped up the jar with gin or vodka ( the cheapest rotgut) and closed lid tightly
She put it in a cool dark place turning it when ever she passed by for 3 months. She then strained at bottled it
Delicious with soda water or as a liqueur.

    Caroline,
    A couple of questions...
    Why didn't you add
    Astragalus Root
to your syrup? Does it not taste good with sweet flavors? Also, the link for the berries is Twice as expensive as the dried berries on Amazon. If You tell me they are worth it, I'll buy them. I don't know if you would recommend any brands they have on Amazon. This year in March I had a tumour cut out of my back and we used MediHoney in the wound(really just a big hole in my back) and I healed up WEEKS earlier than the doctor said. Honey is Awesome! Thank you very much for y'alls videos, they make my day!

Hi Zen I like your question, if you want to add Astragalus to your berries, you should only use one third of it. It is mush better because it keeps blood pressure normal, and also good for the whole immune system, go for it . Peace

Dont let your elderberry's simmer at over 170 degrees anymore than that you start losing beneficial nutrients quickly. At 160-170 the cyanide steams off even though it's a very low dose like apples some people are sensitive to it so 160-170 for 20 min removes it

Can this be made without the lemon? Not against it, just don’t have any. I made some Rosehips syrup while ago & it yielded way less than I had wanted, & now am looking for a way to make Elderberry Syrup w/ alcohol (only bc I thought elderberry syrup without it would last only a month in the fridge) That’s not what you stated however, Yay!! SO, I find a recipe using the main constituent Elderberry but I don’t have lemons at this particular time, so, just wondered if I could do it without those lemons? Have all my stuff still out to fill more bottles. Thank you for you post. Very, very good!!!
