  • Learn how to make this obscenely fluffy Japanese egg omelette from home it's super simple to make, and all it takes is just some eggs and a little seasoning of sugar and salt.
    Ingredients:
    - 5 eggs
    - 2 pinches of salt
    - 1.5 tbsp sugar (optional if you want to make more japaneseesy)

    In Japan, we use a teaspoon of rice or potato starch that is mixed in with the egg whites.

      honestly, that could have been a good addition to this recipe would have made for a more stable egg white, but it does work very well without it.

      Guys, sugar is optional.
      Salt is a seasoning 🧂
      Butter can be oil or oil spray just to not make it stick.
      As long as you have eggs 🥚 you’re good to go with this recipe

    When I was a kid, my mother had a special pan for making "fluffy omelets" - it had a hinge in the middle, so you could fold it over while it was cooking. This was something fancy to serve to the "ladies who lunch" - or to get a picky child (me) to eat eggs.

      Interestingly, in Spain, we have a similar pan to make tortillas a potato egg dish that is very traditional.
      now that you mention it that would be a good pan to make a whole version of this fluffy egg omelet

    I'm not sure that I'd count eggs, salt, and sugar as one ingredient...
    My wife keeps asking for "fluffy eggs" but using only eggs. Nothing else. I was hoping for that when I clicked on this.

      the sugar is usually optional, it just makes it taste better. The salt is also just for flavor, although it does slightly change the yolk texture

    I used Powdered sugar instead of granulated. It adds cornstarch to make the meringue stable. They use starch in Japanese versions as well. I ended up mixing up some lemon curd and fresh passion fruit and serving with that. Delicious and took me 12 minutes including cleaning the mixer!! My daughter was so surprised
