The Fluffy Omelette, now this is something new. This person does a lot of preparation with the frying pan. I don't know how many times he puts oil or ghee or butter. And when he fries it and turns it, it looks like bread. Too good.

Very clean for a street food counter. Even the aluminum pan was clean.
This is more a souffle than omelette. If he adds a ts of milk while beating the egss, cooks it covered and folds it without turning it, the fluffiness will remain.
I make very fluffy omelettes in this manner.
Cheaper to make at home of course. Still, I liked this as a street corner food.
