I love Orsara. I’ve cooked a few of his recipes and he’s helped this irish girl make pasta sauce from scratch! I made the chicken scarpiello last night with all hot sausage ( corona virus purchase restrictions) and a jar of Cento whole hot cherry peppers. My only other change was using quartered chicken breast instead of chicken thigh bc my husband doesn’t like dark meat. Came out fantastic. Love the recipes keep them coming!

I had to substitute pieces of pork for Italian sausage, and could not get cherry peppers, so I added more bell peppers. It was delicious! I added potatoes too...boiled them about 15 minutes while I sautéed the pepper and onion... then emptied the water and back on the stove and got them dry....then on top of the chicken and sausage before going into the oven....they soaked up the flavor!
I cooked this tonight for dinner and my family loved it I don't eat so I made your recipe for arancini except stuffed with just the fresh mozzarella it was really delicious both meals I will be making again.
We've used this recipe three times, and I must admit, it's really good. On the third time, we added 1/2 cup of chopped celery. It turns out that this is a good addition, giving it a nice flavor. Also, we left out the rosemary, but did include the basil and the rest of the herbs (salt, pepper).
