Eggplant With Salted Fish Recipe

2 eggplants, 450g
1-2 tsp Salted fish
130g minced pork or chicken
1 Tbsp ginger, minced
3 cloves garlic, chopped
1 or 2 red chili, optional
2 stalks spring onions, separated into white and green parts
Oil for frying
Water for braising
Cornstarch slurry (1 Tbsp corn flour + 2 Tbsp water)
Sauce:
2 tsp sugar
2 tsp oyster sauce
2 tsp soy sauce
2 tsp black vinegar
50 ml water
