Sardines on toast has always been great imo. Adding cheese, can only be great too. If you don’t like tinned sardines use tinned sild, they’re smaller and less of a stronger flavour The chilli on top is a good idea, Maybe some finely sliced red onion too
great idea, just swap the margarine for butter, from my research New Zealand has become leaders in the field of butter, I've sworn off margarine for years and Canadas butter is terrible as they are adding soy to the cattle feed, a sacrilege!
My wife and I enjoy what we call tuna melts. Much the same as this using canned tuna, mayo, mustard and chopped dill pickle or celery. Cheese on top, though. Not mixed in. I was thinking of swapping out the tuna for sardines or herrings. Now I really need to try that out. Thanks. By the way, what's a "slurp"? A Tsp? A Tbsp? An ounce??
Love the Willow pattern! No cutting the toast in half before serving?! I love the idea of a "splurge" of malt vinegar - great idea - going to try that. Here in California, they don't eat anything much on toast. Food on toast seems to be an Anglo-world thing, not an American one. However, we do have mashed avocado on toast here, so go figure. As a Kiwi, I grew up with most of the lunches my mother made served on toast. I miss food on toast!
We didn’t cut toast because we’re not that refined here hahaha. We’re lucky to have plates!We Kiwis love our toast don’t we? We do have avocados on toast here too but nah nothing beats poached eggs and baked beans or sardines on toast hahaha. Cheers!
In the US a bacon, lettuce & tomato sandwich with mayonnaise is usually on toasted bread. Some people may make a toasted cheese sandwich instead of the traditional grilled version. There are others like tuna or chicken salad with lettuce and mayo, but those are probably the most common. IMO I guess you can have anything on toast if you like.
Butter the bread on ONE side only, put it on a hot griddle, butter side down! until nicely and lightly browned, remove and put the sardine mixture onto the grilled buttered side! then you have the 'hands side' nice and not greasy while the buttered side works well with the fish mixture, and toast THAT.
Shame on you, Cruisy, you have a flourishing dairy industry in NZ (when available, I buy your cultured butter here in AU) and toy use spreadable plastic on your toast? Butter is better!
May I add that vegetable oils are bad for your health which include margarine. Healthy oils are Avocado oil, olive oil, and coconut oil along with animal fat like lard, tallow, and bacon grease. Your recipe looks great and I’m going to try it tomorrow. Thanks. 😊
Please provide evidence that vegetable oils are bad for our health (and animal fats are OK) with credible sources to back that claim. There seems to be a weird misinformation campaign against vegetable and seed oils with no basis in fact.

Butter not margarine. And grate your own cheese. The prepackaged grated cheese has other ingredients to keep it from sticking together and clumping.
