Just got my IP and we made this together. My wife was amazed at how easy it was to make...6 minutes instead of 45 minutes constantly steering the rice. It came out amazing ! We cut all the ingredients in half and we still had left overs. One 8 oz package of mushrooms. Thanks buddy...I think I may get lucky tonight !!

Also, since I had it in my pantry, I used a black truffle finishing salt. OMG. Also, just got your book today. THANK YOU ...when I first got my IP, I ordered some books off the web and they were just haphazardly put together, no pics, no organization. You done great! Love the pics, love the steps and love the way you put it together. So glad I found you!

I just wanted to thank you for introducing me to yet another benefit from watching your videos and making what you make--stress reduction! I had a fairly stressful family situation this week and it so helped when I made a batch of this! I hadn't made this since April and it was a spur of the moment thing, but I did well with the shopping for it after work! The only ingredient I forgot was the shallots but I had onion and that worked! I added cooked chicken to it though I was 8 oz. light on the mushrooms, but when I was done I felt waaay better than I did when I started! Thanks again for your great recipes! They can be therapy as well as inspirations for making great food! As always, my very best to you, Richard, and Banjo!

@@samanthafloyd9083 Since I mentioned cooked chicken I probably cheated and used a bag of Tyson brand pre-cooked chicken strips and since it wasn't geared towards southwest flavoring I probably used the plain chicken and that worked! I am a lazy cook when I can be and do still use sometimes pre-cooked meats and things. It's been a while since I made this but I will make it again! That's the trouble with cooking as a most useful hobby! I find recipes making things I love so much but then I see another recipe I want to try and so on and I end up not quite forgetting the other recipes but not making them for a dog's age! I cook every weekend or off day if I only have a 24-hour weekend like lately. I use my IP nearly every weekend for something like a recipe or even rice. It's put my rice cooker out of a job!
WoW talk about time saver. I usually make it on top of stove. Add a cup of water stir for 5 minutes add another cup of water stir for 5 minutes add another cup water stir 5 minutes. And. Finally another 5 minutes. Not to mention melting the butter and brown the arborio rice. Love this recipe!
ive been making mushroom risotto in my Instant Pot for over a year now. I did a video months ago. It’s the best. You can use Carnaroli rice too. It is also a medium grain rice like Arborio. I find it on the discontinued shelf at Walmart or at Marshalls/HomeGoods. I just got a 1 lb tin from Italy for $5. It is the same type of rice as Arborio. With the Duo or Duo Plus machines you change the pressure with the pressure level button but you can change the pressure level by pressing the cycle button several times (on my Nova Plus and my Lux). Truffle Oil is yummy but if you can find D’Artagnan Truffle Butter or Sabatinos Truffle Zest they are even better. There isn’t usually any real truffle in the truffle oil but there are real truffles in the butter and the zest. I can find the butter at my supermarket but the zest i find at Cost Plus World Market.
Jeff I made this last night for my wife and she loved it!! The only change that I had was black truffle oil instead of the white. thanks for your videos they really help and we enjoy them!!!

I made this tonight. It came out as perfection. It is creamy, and so full of flavor. I cut the recipe in half, because it's just me and my husband. I WILL be making this again.
I used this as a framework to make risotto in my Insta Pot Mini (3QT). I doubled the mushrooms, added asparagus and shrimp, and used 1.5 Risotto + 3 cups vegetable broth, no wine or truffle oil in my pantry so I skipped that. For everything else, I followed the recipe. IT WAS AMAZING!!!!! Thank you for the recipe. Could you please specify the size of your Insta Pot on your videos? For example, using 2 cups of Risotto in my Insta Pot Mini would have expanded and been too much volume. Risotto is time and labor extensive to make, it's amazing it comes out like this after 6 minutes.

Made this today, and actually pressure cooked it for 8 minutes. Used half white mushrooms and half chestnut mushrooms. It was so easy to do and tasted absolutely devine. Smooth and flavoursome. Thanks Jeffrey. 🌈👍😎

I made this with a variety of mushrooms, all readily available from the grocery store, with great success. Used a dry Sav Blanc as well. I could not resist adding a quarter cup half & half at the end; even that small amount made it extra creamy. Thanks Jeffery. Both this risotto and the eggplant version are top drawer. Next I'll try using duck breast. Should be good.
I got my first insta pot for Christmas, tried making risotto yesterday, but had no mushrooms, so I used 2 cans of tin mushrooms and decrease the broth to 2 cups, turned out great. Can't wait to try pastas. Love your channel.

I made this and it was great. Only thing I would do differently next time is a little less truffle oil. But it was so good - my kids loved it as did the adults.
I thoroughly enjoyed your video! It looks easy. I had never attempted to make risotto because watching the hosts on the cooking channels it seemed to require too much babysitting. I was afraid that I would mess up. But this!! I can do this! I’m WFPB, so veganizing this will be easy. Just replace the butter with vegan butter and either use vegan Parmesan or nutritional yeast. I’m definitely using that mushroom broth until I can save enough stems and ends to make my own. I’m so excited! I’m going to Whole Foods today to get a few things and this will be part of our dinner tonight! Thank you! Thank you! 😊
I just made this and it was delicious. I just have to halve the recipe the next time. But, it cooks up so fast that I barely had enough time to grate the parmesan and set the table. Yum!
awesome recipe, my favourite for years, and now using the instant pot! Here are my additions to this already perfect recipe: 1. after the 6 min. cooking time, adding the cheese, have the pan off from the heat, put a towel over it, and leave it to rest for 5 minutes. 2. I never buy grated parmigiano, always buy a piece. With grated you almost certainly wont have real parmigiano. When you buy a piece and see the stamp "parmigiano reggiano", then its real thing. otherwise you have been fooled. And besides, it takes just 10 seconds to grate it fresh, so little time to gain there.

Your risotto recipes are spot on! I always add a leek and some garlic to risottos as it adds a great flavor and 1 cup of wine instead 1/2 ;-)!
