I just made this soup and it's scrumptious! I have made it before with Kale. I used 2 different sausages, 1# of jimmydean Maple flavored sausage and 1# of smoked kielbasa. Everything else was the same tho. It's been raining most of the night and going to start again and go from 50°+ to 20° and rain/snow mix overnight in Virginia - so its perfect with a loaf of artisan bread. 😋 Thanks for the recipe!

For years I raved about Olive Garden's Zuppa Toscana until I made this recipe. Family came out over Thanksgiving and wanted to meet up at Olive Garden and of course, I ordered the Zuppa Toscana. I just made this soup. I used all Johnsonville Sweet Sausage and I used Trader Joe's Shiraz wine (instead of sherry). It's what I had, so I used it. OMG!!! It's the best soup I've EVER eaten in my life! I made a pan of cornbread to go with it. I can die tonight a happy man!
I am making this right now. I have made it many times! Let me tell you, I did go to the place where they rave how good it is. Believe me, I would never order that soup again. This is simply the best soup in the world. So easy to make with an insta pot. I sauteed some diced thick bacon (bacon steak from my butcher) with the shallots and sausage, and this makes for some additional tasty bits that amplify the porkiness of this soup. My kids always want this soup so I'm making it for the holidays. Thank you for this recipe...you should be made king of soup!

I picked up an instant pot on a whim on sale at Jeffrey's beloved Costco. I had no idea what to do with it. I found this channel, watched the video for stroganoff, which I love, and said why arent I eating this right now?? Ran to the store, made it. Fantastic. It made an instant pot believer of me. Then I picked up 90 cookbooks (ok, not 90 but more than 9) made one side dish. It was good. Came back here. I was going to make French Onion Pasta but found this and made it instead. I can not believe how just unbelievably good this is. So rich. I served it with thick italian bread and a salad. It's definitely going in my winter soup repertoire. I would recommend to other rookies to mise en place...i3 didnt and wished I had. It wasnt a biggie but it'll make life simpler, especially if you use fresh garlic. Making the pasta tonight!! I have a friend at work whose SO uses the pot to cook for them, I've told her he needs to check out PressureLuck!! Cookbook pre-ordered, I cant wait!
Just made this wonderful soup. My husband had two bowls and almost had more. I used Johnsonville bulk sausage, so didn’t have any casings to deal with. Also, diced Yukon gold potatoes and regular cream cheese. Took about 35 minutes from prep to bowls. Thank you for a great, easy, fast, and Souper tasty recipe.
This soup is BEYOND DELICIOUS!! It was one of the first things I made since I purchased my Instant Pot 6 weeks ago and I have made it almost every week since. I shared a bowl with my neighbor and now she's as hooked on this soup as I am which now means I make a double batch....one for her and one for me. First time I made it I did not have Boursin Cheese on hand so I substituted with about 3 oz of goat cheese and 3 oz of cream cheese. So delicious, I continue making it this way. I LOVE LOVE LOVE so many of your recipes. Thank you for sharing! Looking forward to your next great recipe.

This literally is the best sausage soup I've ever had. Perfect for a fall/winter evening but I'm craving it right now in mid August. I'll be going to the market tomorrow to get the ingredients to make it again.
Just made this and oh my! My family loved it! I used chicken Italian sausage. I substituted kale for the spinach. I also couldn’t find the boursin cheese(all sold out because of the holidays) so I just used a garlic and herb cream cheese from another brand and it turned out great! Thank you!!
I will have to try the chicken sausage…. Not sure when you put your kale into the recipe…. I Put it in the same time as the heavy whipping cream and the Boursin. Stays pretty green and it cooks quickly. Yumm.

One question, my local grocery store carries mild and hot versions of the Italian sausage in both link and ground packages. For something like this, do I lose anything by just going with the ground and save some time?

First meal in my new Instant Pot. I did 1lb of Johnsonville Sweet italian sausage and kale instead of spinach. Also, there was no Boursin so I used Rondele. Brown onions instead of shallots. Mondavi instead of sherry. Still came out absolutely excellent!
Tried this tonight and it was yummy. I wanted to make it just a little bit healthier ... used chicken sausage, and left out the Brousin (as much as I like it). Also, instead of adding the spinach before pressure cooking, I added it after everything cooked. It wilts right down and stays a little greener. Delicious.
OMG this is deliciousness in a bowl! It was my 1st time trying Boursin & it definitely brings this soup up a notch. I took a spoon to rake the remainder of the cheese off the foil (like the cake bowl).....LOL. I added Parmesan & Gnocchi to the dish! Talk about melt in your mouth goodness! DH loved it as well.
Hey JE. Made this tonight because the hubs and I love OG Zuppa Toscana. As advertised, yours beat it by a mile. We used hot turkey Italian sausage, and subbed fat-free half & half for the cream. I took the liner pot out of the IP before I added it and the half & half did not break. We saved a few calories but didn’t miss out on any flavor. This recipe is a keeper and definitely worthy to serve company. Thank you so much. Luscious easy food. What more could anyone want??
I began making my own version of that particular soup over 20 years ago. I use kale instead of spinach. I hadn't thought about adding the Boursin, but I might try it next time!

Cornbread is a great idea....next time I think I'll add 'dumplings' for a traditional touch, after the pressure is released.

Wow this soup looks absolutely amazing! I think I’ll add some flour to cooked sausage then add remaining ingredients, sans cream to thicken a bit. Maybe add a can of white beans as well. Thanks so much, Jeff!
