As another poster said, it looks like a lot of work. I'm handicapped, so I can only stand for a few minutes before my back and legs get too shaky and weak. I make a milk gravy by sprinkling over some flour, then slowly add milk as i whisk. I add a little bit more milk if it's too thick. This is for chicken and chops. I make brown gravy with drippings from the roast. I use salt free beef broth and flour to thicken. For beef steak and gravy, I do the caramelized onions like you, but also add thin sliced baby bella mushrooms. I'd be belly up to the stove making yours if I could. Results are fabulous and look so tasty. 🤤 drool
Hey Camirra 🤗 Those onions looked 🤤 I like cooking them down like that for burgers, bologna burgers, hot dogs, brats, etc. Those mashed potatoes looked delicious as well. I like leaving the skin on to give it an additional texture. This was interesting to watch. I’m definitely trying the gravy recipe.

Also I am going to start using cream instead of milk. You're right. Cauliflower is a bit watery when cooked. But the flavor cauliflower adds to mashed potatoes in perfect.
Very helpful video on making flavorful gravy. I like adding celeriac/celery root in to boil with my potatoes because it adds such incredible flavor that goes well with all proteins. I have also found that adding butter and some starch water from the boiled potatoes thickens the gravy without flour or cornstarch. Also, dried potato flakes work well as a thickener for stews and such.

If you don’t have browning, you can add color by adding just a little (maybe a quarter teaspoon) of instant coffee. You won’t taste it but it makes the gravy darker brown.

Thank you for continuing to explore alternative ways to create accepted foods. This gravy concept is very interesting. Your introduction mentioned a low carb and no corn starch recipe. You then introduced high carb potatoes starch. Self- defeating. Cauliflower was a good addition. Perhaps oat flour?
its not self defeating. if you are gluten free, then potato isnt an issue. the potato caulflower mix can work for ppl that are not keto but may want to keep carbs a little lower. or just folks that want to sneak a vegetable in undetected. i dont think oat flour would work.

Also true for baked goods, some lc flours work better than others for muffins or cakes or anything that needs "lift." Almond flour works better for dense, chewy brownies, for example, while oat flour works better than almond for crusty breads. There's some adjustments in baking times also.

This is why Farmers and Food Producers started spraying our food with chemicals and pesticides and waxes etc. People scorn produce over the slightest imperfection or discoloration. Aint nothing wrong with a few dark spots

My family had a very old fry pan that my mom and her sisters called "Miz Dottie." If making cornbread or frying chicken, they'd say, pull out Dottie, she'll get you that good crunch on this food!" lol. Thanx for bringing back good memories of the women in my family, all of them gone on now.
Nah, time is an ingredient in great food! My grandma used to make no flour gravy this way or slow and stirring milk as it cooked down, both way better than cooked flour flavor or anything that comes out of a packet...
