  • It’s time for a SUNDAY MEAL PREP! Save $15 on your Almond Cow with my code LUCIE: almondcow.co/discount/LUCIE - I am obsessed with this machine...but I’m assuming my excitement about that already came through!!!
Meal prep is such a great way to improve your health and lifestyle. Batch cooking can change your life. Ever wonder what I eat in a day? Come cook with me and meal prep with me as I show you what a typical weekly meal prep looks like! I’ve made a couple of meal prep videos in the past, so if you want to check those out, here’s a great place to start:
5 Days of Meal Prep! (Try Living with Lucie from r29): • 5 Days Of Meal Prep | ...
How I Make All My Meals At Home (another Refinery29 video!): • How I Make All My Meal...
I know you’ve been waiting for this video after my farmers' market haul! If you follow my Instagram, you’ll know that Michael and I cook a LOT at home…and many of the recipes I’ve shown you in the past are various recipes consisting of already pre-prepped and pre-chopped foods. So today, I’m walking you through the entire prep process!
Typically Michael would be doing this WITH me...we live in a home where we split the kitchen duties entirely 50/50! But on this day, Michael had to work...so it is SOLO prep time!
Before we get started, I wanted to walk you through the things that we like to prepare: veggies, grains and proteins. I typically like to prepare all of these things in advance by chopping (and storing raw), cooking what I can, and just making sure everything is ready to go for the week ahead. We also eat some foods that we buy fresh the day of (like fish)! About half the vegetables get chopped and stored in the fridge, and then the other half get cooked! I had prepared my rice, quinoa and pasta before I started filming this video.
This video shows me prepping kale, eggs, broccoli, peppers, purple cabbage, onion, zucchini, eggplant, sweet potato, frozen chicken, and making my own homemade almond milk!
Let me know if you have any suggestions for how I can optimize this process, and let me know.

Haha, you really treat your kale well! I absolutely love meal prepping, super nice to get some inspiration. :) My favourite thing is that setting aside some time once a week makes life SO MUCH easier the whole week and then I'll be pleased with myself from some days ago every time I open the fridge, haha! Loved the vid. :) Appreciated the different tones for the pop ups haha 😂 Could you next time finish the whole tone ladder though, haha?

LUCIE ! YOU CAN EAT THE STALKS OF THE KALE (cavolo nero to be more precise) ! Once you have removed the leaves, chop the stalks into 2cm pieces and fry in a pan with little oil and cover until they have become a little soft and then chop the leaves into pieces and add them to the pan to wilt. Add salt and pepper and voila! This is so delicious trust me!

Awesome inspiration for meal prepping ingredients I don't usually work with. Thanks! Also rice cooks well in a crock pot for meal prep, too, and doesn't take space on the stove. It also freezes well (when done correctly) if you need to make big batches ☺️

Thanks for sharing! Just a suggestion... you could also freezer meal prep all of that into freezer meals or frozen ingredients to use later ie lasagna, chicken stir fry, muffins, soup, smoothies, chili, cookies, gf bread, etc. You could also add edamame, beans, peas, and lentils as added protein to your meal prep. Then you have heat and serve meals when you are short on time or not feeling well and frozen ingredients you can turn into a meal when time/ energy permit. Thanks 🙂

So real question: how long do cut veggies last you without going soggy? Especially more watery veggies like the peppers?
Also if you use the stems of the kale for your green juice you get a lot of fiber and you get to use it all! Same with spinach
