  • In this episode of 'Price Points', Epicurious challenges spice expert Ethan Frisch of Burlap & Barrel to guess which one of two spices is more expensive. Ethan breaks down cinnamon, turmeric, black pepper, chili flakes, cumin and smoked paprika. For each type, Ethan analyzes, smells, and taste tests before guessing which spice costs more. Once the prices are revealed, he explains why.

      Haley Bee I tend to think it’s chalk markers. I used to illustrate giant chalkboards with traditional chalk. I used crayola chalk in the small size, rainbow pack. They have vibrant color compared to teacher’s chalk and sidewalk chalk. The board here though is just so extra vibrant and has constant texture. It’s easier to make a gradient with real chalk but their inconsistencies make the drawing strokes very obvious where as this board is just so smooth. Hope this helps 😊

      Try his company's spices: Burlap and Barrel. They are the best spices I've ever used and generally not too crazy in price. The ones I like the best are the smoked paprika (unbelievable) and the Black Lime. Their prices are generally $6 to $9 per jar, and the jar lasts about 4-6 months. Because their spices are so well sourced, their flavor goes a lot farther than the crap you buy at the store...so you don't need to use as much.

      Citrus is a specific genus of plants, however the more general flavor or aroma associated with their fruits can be understood by reading
      en.wikipedia.org/wiki/Aroma_compound
      and searching for the aromatic molecules associated with orange and lemon (more generally also lime, grapefruit, etc, but those aren't represented in that page.)

That said- while often, more expensive spices are much higher quality, you can improve your dishes simply by preferring fresher herbs and spices when you can, (especially in the case of green herbs,) and buying whole spices, even of a lesser quality. Cheap peppercorns, cheap cinnamon, cheap nutmegs, freshly ground, are all worlds better than buying plastic shakers of pre-ground dust.

      One of the absolute best olive oils comes from Jovial (the same brand that brought einkorn back to the mainstream). Their olive oil is certified 100% organic, and a blend of three different ancient olive varieties from small family farms across Italy. It has a deep, fruity scent with a full yet delicate taste. It's very pricey, but considering they're keeping small family farms in business and keeping these olive varieties from the verge of extinction, I'll gladly pay the premium when I can. Not to mention you are getting excellent tasting oil worthy of the asking price.

      I would instead do an episode for syrups (Maple syrup, honey, agave nectar, etc). Because there aren't that many types of honey. It would be like if they did an episode on just paprika... doesn't work like that.

    • @chelc6101
      @chelc6101 5 років тому +30

      DareDB KPop if the cinnamon challenge was taking a pinch of cinnamon and putting it in your mouth, no one would have died. The reason people don't do the challenge anymore was the fact that it caused so many people internal burns, and death mostly in younger kids because they couldn't breathe, and their throats and lungs swelled from the irritation.
