This week I'm making a vegan biscuit, bacon & egg breakfast trifles with layers of flaky buttermilk biscuits which is a recipe in the #hotforfoodcookbook! I've also made tempeh bacon, sauteéd mushrooms, onions and spinach, and vegan fried eggs made from tofu and a runny yolky sauce that's super simple to whip up!

Has anyone ever told you that you are insanely creative and basically a genius? I'm an eggs Benedict fanatic and that sauce looks exactly like soft poached yolks! Insane. My mind is totally blown.

This is a game changer!! Deconstructing the egg and making a yolk sauce is GENIUS!! We made it tonight and it was delicious. I haven't eaten eggs in about a decade so I can't say for sure that it tastes like an egg yolk but it does taste exactly like what I want an egg yolk to taste like - the egg yolk of memory - rich,decadent and delicious! I will use this sauce for tofu and hash browns, toad-in-the-hole, so many things! First it was the nacho cheez sauce and now this yolk sauce - Lauren, is there anything you can't do!?!? Thank you so much!

The thing that just absolutely blows my mind is how it's almost made entirely out of vegetables. So if I decided to eat both portions to myself then I don't have to feel guilty about it!

I mean... No. Vegan butter, refined flour etc are very drastically far from their constituent ingredients, and not healthy at all
Molly Considering the comparison of the non-vegan version I'd say I'm pretty secure in believing it's healthy. As long as it's in moderation it's okay. I'll enjoy my breakfast with vegan butter and refined flour since I only live once, but you go ahead and enjoy a pompous breakfast of just fruit and veggies 😊 Heaven forbid someone wants to eat something delicious once in a while.
Alicia Renee I didn't say I don't eat these things nor that people shouldn't. It seemed from the comment that you were thinking it's healthy when it's in all likelihood no better than the animal counterparts. Vegan butter is often more unhealthy because of transfats. Doesn't mean you shouldn't enjoy these things, I'm just pointing out that the "it's vegan so it's healthy!" mentality is fundamentally flawed. That's all. I enjoyed my toast and vegan butter with jam this morning. It's not a big deal.

OMG YES. One of my favorite meals growing up was homemade pancakes with fried eggs layered (my dad had them growing up, but the pancakes were too sweet so he did that) sweet and savory...BOMB. I can't wait to make THIS and also try the yolk sauce/egg situation with other things!!!

I just made this and WOW that yolk sauce is spot on. I made tempeh bacon and used the tofu and sauce for the egg part on a piece of toast.

I’ve done a similar recipe for the yolk: veggie broth, nutritional yeast, veganese, salt and cornstarch you can also add turmeric to add vibrant color. I’ve also used a store bought butternut squash soup as a vegan egg yolk substitute - heat soup in pot add corn starch and salt.
My mom and I have made all of your trifles. She's not even vegan and uses your cookbook. You are the trifle queen!!!

I have been converting recipes for 25 years with no problem usually (except RIP croissants.) My youngest daughter had severe anaphylactic reactions to 6 of the top 8 allergens and a dozen more things kids love to eat plus my own food intolerances, autoimmune reactions, and allergies, including Celiac disease and a nightshade allergy ...point is; can’t have tomatoes but I tolerate small amounts of organic, low sugar ketchup (higher processed, must break down whatever I react to) and can not wait to attempt this recipe and be reunited with my old bestie, runny yolk! 🍳
P.S. Your coconut bacon is my favorite snack.
