Today I’m going to show you how to make bukkumi, pan fried rice cakes filled with sweet red beans, or with mung bean paste. These rice cakes are gooey, chewy, and sweet on the inside and crispy on the outside. The texture is just wonderful, both soft and crispy at the same time.
I just found this recipe today and happen to have everything, even the Korean dates and pumpkin seeds - so I made a few of each....omg, these are SO delicious and satisfying!

I think of my Dad whenever I make Kimchi. He loves kimchi so much that he would have it with every meal. He's Welsh, but I think he must have a secret Korean ancestor, because all us kids love kimchi too.

This has been the easiest recipe I have completed and actually done correctly! I love the recipes you post but some are harder for me to follow. I have tried about 5 of them and they don’t look as good as yours 😊.This was just perfect! Thank you for sharing!
I mostly think about my father it terms of cooking when I'm preparing a meal. He used to sit by the dinner table and thoroughly cut the ingredients to perfection. Now I catch myself doing the same thing. My father passed away recently so I've been thinking about him every time I've prepared a meal.

Maangchi, I am so excited to try this recipe! I have celiac disease and can't eat wheat flour, so it can be difficult to find traditional dessert recipes that I can make. So I always love your recipes that are made with rice flour that are naturally gluten-free AND traditional and delicious!

Hannah Blumenfeld I was wondering if the dough could be used for mandu because I'm sensitive to wheat. I'm going to try this dough for mandu because I really, really, miss mandu and I have glutinous rice flour I need to use. LOL.
Shavonne TV mochiko will gives your mandu more chewy. You can use rice flour(japonica rice flour)
mi mi Thank you for answering my question. I was going to try mochiko anyway because I love mandu! So far, I've been able to find substitutes for ingredients I'm allergic or sensitive to. Korean food is my absolute favorite food!
My special family food memory is from my childhood. We lived in Italy when I was a child. My parents had friends who owned a lovely restaurant -- Giuseppi and Maria. They would bring my mom and I back into their kitchen and teach us their recipes. This was heaven for me, sitting on a counter, watching Maria and my mom together, laughing and smiling. Maria's best recipe was Spaghetti a la Carbonara. No one makes it like Maria and my mom! Absolutely delicious!

Aww, Maangchi, seriously... I was already in bed, ready to go to sleep.
Now I'm just out of the kitchen again, the Bukkumi dough resting in the fridge. This will be the breakfast for my children, they love everything made with mochi (I never fried it in the pan before, though, just steamed it). This will be a good use for the batch of sweet red bean paste I made earlier today. 😊

It was lovely, my children and I enjoyed it very much.
Left over cooked rice with an egg scrambled added for breakfast was one of my father's favorite. When I make this for my grandchildren I tell this story often.

These sweet bean dishes remind me of bean pies my mother made with navy or great northern beans. They were made with sugar,vanilla, mashed beans,eggs and put into a pie crust and baked. Then i decided to try making a savory one with meat,green onion and other spices, very tasty.
Haha Maangchi, the name of the recipe is funny because my bother's name is Bukunmi (Nigerian). It is pronounced the same way, I had to rewind and hear you say it again.

So I just made these and they were delicious! But instead of jujube and pumpkin seeds as garnish I smeared honey on top and then sprinkled on toasted sesame seeds!

My grandfather loved pork cooked with sweet soy sauce and he left us 5 years ago. We love him so much and always make this dish when miss him.
I just did this... It is awesome! Two things: 1., Do not leave out the sesame oil, oh my it takes huges difference! 2., Do not mind the burning oil. :D I think my new favourite food is chewy rice flour cake. :) Thank you Maangchi!

White bread with butter and a bowl of fruit (like frozen raspberries that have thawed or apple sauce) makes me think of my grandpa. They were poor farm people so bread with butter stretched meals. He ALWAYS had his bread and butter with dessert 💜 I miss him ever day

whenever I make traditional quesadillas made from corn flour and stuffed with Oaxacan cheese, I think about my mother! it was my favorite food and she would always make it for my birthday.

Such a heart warming moment to watch Maangchi, with a fancy hair-do, producing full pockets. Bukkumi makes a good reason for breakfast or brunch... with a cup of hot soy milk, which I usually enjoy winter days...But keep in mind to brush your teeth well after intaking this sticky half moon~
