HI! I am Joconde.
This week, I made a fig cake.
I made the Fig puree by mixing sweet purple figs and raspberry puree.
I saw a recipe for French chef Christopher Michalak to make confit by mixing figs with white wine and raspberries. This really velvety fig turned out amazingly delicious.
However, figs contain an enzyme called Ficin, which is a proteolytic enzyme.
This enzyme loses its properties if it is boiled for a long time. I have tried, but it could not set the fig puree.
So I had to use pectin. Pectin gels when boiled with sugar.
Use 0.5 to 1% of pectin mixed with sugar.
Even if you use pectin, it does not set as hard as gelatin.
However, in a cold cake, it retains its good shape.
Here, I decorated it with green figs that are small but very pretty.
The greed figs taste good, and the size and cut section were just perfect for the decoration of the cake.
Purple figs and green figs are slightly different in size, taste, and shape.
It was a fun time making cake with good figs.

The acrylic ring I used when assembling the cake was custom made.
It had appeared in my videos before.
Because it is transparent, it is convenient to use it when making a ‘Fraisier’ style cake decorated on the side.

220g red figs
70g Raspberry puree (Boiron)
30g sugar
1/4 tsp pectin (1g)
♥︎ Fig Jelly
200g fig puree
♥︎ Pistachio Biscuits
50g almond flour
20g cake flour
25g icing sugar
1 g salt
65g egg (1 egg + 1 yolk)
45g egg white + 20g sugar
18g pistachio paste
♥︎ Cream filling
200g Cream Cheese (Philadelphia Cream Cheese)
60g plain yogurt (Yoplait)
2g vanilla bean paste
250g heavy cream
50g sugar
6g gelatin
70g fig puree

I have to say this. Usually the pretty cakes I have seen look beautiful but they are made of the same flavors every time, chocolate, vanilla, they just add food coloring and nothing out of common. But yours are so amazing! They don't just look beautiful, you also add delicious flavors to them! I would die for tasting one of your cakes. You are wonderful 💖✨

Это одно и то же - инжир, фига, смоква. Все азывают по-разному.
если поиграть с ударением, то торт становится сомнительного качества

I just found this channel on accident but it looks amazing and I cant wait to try making a cake ^-^ I've cooked meals most of my life and I've done a bit of baking but most of these techniques are new to me and look delicious! Just hope I can find the right kind of gelatin because I'm not sure the powdered version in my grocery store will work the same.
