Hi! I am Joconde.
When it gets cold, I love coffee that heals me, even if I am very weak at caffeine!
More, the coffee with sweet caramel makes the world happy.
This cake is made with white coffee whipped cream (Not the brownish cream) and divine caramel.
The taste is luxurious and elegant.
I wanted to use the leaf to decorate the autumn cake.
There is plenty of Ivy leaves in the garden of my apartment. So I choose it.
Ivy is non-toxic.
It is used as a medicinal Ingredient in oriental medicine.
The leaves were washed well in water and disinfected with alcohol before use.
I made leaf-shaped chocolate using this and decorated cake,
This cake looks like autumn, and also tastes really good.

Ingredient
♥︎ Coffee Whipped Cream
52g roasted coffee beans
200g heavy cream A
Whipped cream B: add to make 420g cream in total.
36g sugar
♥︎ Chocolate Leaf
1 ivy leaf
Appropriate amount of white chocolate couverture
♥︎ Caramel Filling
50 g sugar
50g heavy cream
25g hazelnuts (roasted and chopped)
♥︎ Coffee Genoise (15cm/6 inch)
150 g eggs
80 g sugar
100g cake flour
35 g hot milk
Instant coffee 6g
(dissolve instant coffee in hot milk)
26g unsalted butter
♥︎ Coffee Syrup
60g Espresso coffee
10g sugar
♥︎ Caramel Glaze
5g gelatin
83g sugar
100g water
83g corn syrup
55g condensed milk

@@BruinPhD2009 I never really understood the appeal of ASMR either until I found this channel. Most channels were just people whispering nonsense. No thanks! But this uses just the right combination of sounds. It reminds me of listening to my mom making Christmas cookies when I still believed in Santa Claus. The smell of cinnamon, nutmeg, and hot chocolate!

Whenever I see a masterpiece like this, I am just stopped dead in my tracks in amazement. The skill required is of course admirable, but before even getting to that point I'm just blown away by the *creativity* it takes to dream up a dessert like this! I am so grateful there are talented people out there coming up with these lovely creations that add beauty and sweetness to our lives!

I’ve been following you all through the past year during lockdown(s). And finally got the courage to make some of your recipes. While mine never look as beautiful as your results, they unfailingly taste wonderful. I’m a huge fan of making small cakes now. But what’s even better about your recipes is that they are never excessively sweet. Even the ones that are intended to be on the sweeter side.You always focus on a balance of all flavours to celebrate all of the components in your recipes. Just wanted to thank you for your work. You are just so talented. ❤️🇨🇦

Normally when I watch these cooking channels I usually sit here with tongue in cheek and think I wish I could do that when the simple fact is I will never be able to do that, people who are creative are on a whole other level to the rest of us. However I do appreciate art in what ever medium it is presented. Some people don't see baking as an art form those people are dumb. They have obviously never been to Cake International my mouth hangs loose every time I go at the sheer art and dedication that has gone into every single entry.
My favourite TV shows in my country (ENGLAND) is Master Chef, Extreme Cake Bakers and the Brilliant Great British Bake Off. I sit in awe because even when they mess up it is still awesome to see that it isn't just us moms at home but professionals can mess up also.
My favourite cake channels are Zoe's Fancy Cakes and she is a maestro at cake designs. Maison Olivia and Jemma's Cup Cakes she is British and started out on a market stall in London now she has two shops one in Soho and one just of from Hanley's Toy Shop. These are prime locations in London she is extremely popular with the 13 year old kids and upwards because she also doesn't boss she doesn't act superior she has a knack for baking and has turned it into a bloody good living. Now your on my favourites. Your delivery and the way you work is so soothing it relaxes the brain while at the same time is teaching you and because your brain is relaxed more stays in and that is priceless. We should be able to follow recipes but as of everything some people are just better at it and sadly although I love to bake will never be in the same league as any of the ones I have mentioned.

Thanks for sharing that info about Gemma. I'm subbed to her ch as well. I've made her SMBC too many times to count now. Thanks to Gemma she introduced me to Biscoff. I've made her Biscoff cupcakes several times too (SO GOOD)!!. Today I plan to make a Chocolate Biscoff pie. The base will be made with Biscoff cookies and the rest of the pies recipe is coming from another bakers blog. I plan to either put a layer of Biscoff spread in between the chocolate or do a Biscoff spread swirl. Still deciding on which way to go, lol... 😋

I’ve tried a couple of your recipes. They work and they taste wonderful, but the end result when I do it is not nearly as clean and pretty as yours, of course. I imagine you’ve been doing this for years and I’m just an occasional baker. It’s wonderful to see your beautiful work. It gives me something to aim for.
