- In this video, you get a glimpse of what is life in a hostel when traveling the world.
Alex proposed me to cook some Egyptian food, and to make a video about it.
First we go around downtown Cairo to get the groceries, and then we go back to Holy Sheet Hostel, and we cook mululkhia, a very typical egyptian dish, and also some delicious offal and chicken with lemon flavor.

Cairo is more than a 1000 years old. As for the downtown area in which you are filming, it was built during the reign of Khedive Ismail son of Muhammad Ali, the founder of modern Egypt more than 150 years ago, and Egypt was then an independent state before the British occupation, and architects from France were hired because Khedive Abbas loved European architecture, especially French

Muloukhia isn't a mixture of herbs, it's called 'mallow leaves' in English. What you bought in the market is the dried version, however its also cooked using fresh green mallow leaves when in season.

Muloukhia is called corchorus in English while Mallow leaves is called Khubaizza in arabic. They're totally different.

What an insight you gave us into Egyptian cooking. Please do something like this when you visit different countries. I also liked the idea of folks from different countries getting together and sharing a meal.

I stayed at a hostel in Egypt once, I was with a friend, there was so much to do by the time we were in the hostel, we were probably snoring before we were in bed!! couldn't tell you if anyone even lived in the same building, I am amazed you made so many friends. cheers look like greet fun.

Alex and his assistants did an excellent cooking job .... the molakhia was cooked in an alternate short cut way with some key ingredients missing, but even so i'm sure it was tasty... it all looks lovely. Well done guys.

What a fun video! I spent an afternoon cooking in Palestine with a group from "everywhere"...what a great time. Who doesn't love to eat?
Fun fact about this meal u had, when you eat a meal with Egyptians it creates a bond even if its just a small amount of food, we call it in Egypt bread and salt regardless of what you ate, having a meal together like this is a bond that is respected by all egyptians and its a sign of respect and bonding, this may have dated back to our ancient ancestors but im not 100% sure as many of our customs and traditions now date back to ancient Egypt.

Yummy yummy traditional Egyptian food 💖 u need to try Rokak and Mahshi (staffed eggplant, grape leaves, paper and zucchini) also makrona bashamel 😋
Mulokhiya is actually a plant kind of similar to spinach, it is picked and laid out to dry. In Egypt they crush it after it is dried so it becomes like a powder and they make this broth with it, I've never tried it the Egyptian way. But in other areas like the Levant they don't crush it but keep the dried whole leaves and cook them like that which makes it a totally different dish and it tastes great! (We also have it with rice and vermicelli and chicken with a squeeze of lemon on top of everything)

The hostel area looks surprisingly clean. And you should definitely try stuffed pigeon it’s vey good. If you end up by the sea side try molokhea wish shrimp... different level altogether.

Just a heads up because I know you love rice Kino and are likely to cook it throughout your life; aside from ending up with non-sticky rice, one of the main reasons it's very important to wash it is because of the dangerous levels of arsenic, especially if you eat it regularly enough for it to build up.
Following many hours research, my preferred 'easy' method is to soak the rice for as many hours as possible (so I do it overnight,) rinse it thoroughly, simmer/boil it in 5-10 parts water for 5-10 minutes depending on the rice variety, rinse it again and then steam it for 5-10 minutes depending on the rice variety. If you can't steam it, just cook it in the water for twice as long and rinse it with boiling water after instead.

I have a lot of Egyptian friends in Abu Dhabi when I worked there in 2009. I miss their foods so much...like koshari, mahshi,basbousa ful madames ,shawarma etc. The only I have in mind are the memories with them and the acceptance of them as their friends even I'm the only Filipino in their group because I have 2 Egyptian workmates.
I even learned to sing the first stanza of the song "yalli ghayeb" by Ahmed Fahmi I really love to sing this song
As a Palestinian the green soup dish is "Molokhia" Corchorus olitorius, in Latin, which you eat with rice and grilled chicken. Cook the chicken and take it out of the soup and add Molokhia leaves. Prepare a sauce on the side of lemon, hot green pepper and garlic. It is a delicious dish. Molokhia if frozen from the market can be whole leaves or chopped leaves. It gives it a good texture if you mix the two together.

The "stomach" of the chicken we call the gizzard in USA. It is filled with little stones when the chicken is alive, to help grind up their food, since they don't have teeth. There is a tough yellow lining (or maybe it's a covering??) that peels off easily, and they are almost crunchy when cooked. I like them a lot.

Molukhia is a single herb actually not mixed, it is eaten in two ways, the fresh green way and the dried way, I think it is made the same way, but the difference in taste is huge, coz the dried one is kinda concentrated, they both have their fans, I like them both.
It has a history this herb, it is actually called Molokai with a K, which means royal, so it is literally a royal dish, and the “KH” version of pronunciation came from mamlokies who where not Arabs in origin, in Egypt it’s usually eaten with rabbit meat, but other Arab countries usually cook it with chicken, other versions of Molokhia is cooked in Syria and Lebanon and they are great in taste too, you should try it in a Lebanese restaurant some day, mention me if you liked it 😉

we buy it fresh in its season.. in the rest of the year we buy it dry as you saw it in the shop..

Actually what you ate is dried molokheya, it's a vegetable/plant not a herb.
Molokheya is a summer vegetable and fresh molokheya tastes much more delicious 😋 (it is also found frozen in supermarkets).
