    The Sqealing noise is caused by the heat from the basket rapidly warming the carbon dioxide in the dry ice changing it from solid to gas, which then pushes the ice away from chips, causing it to vibrate and make noise 😊

    4:33 it's called the Leidenfrost effect. It's a membrane of steam that surrounds an object inbetween extreme temperatures.
    It's the same effect that causes cold drops of water to bead and bounce across a hot pan on the stove.

      He could certainly write an *article for a food science website, site, zine, blog, or newsletter. I'm sure they would enjoy it!
      However, there weren't enough controls to make it a true lab study. Yeah, the science community is pretty strict about that sort of thing.
      But he should still publish the article! 🙂

      @@Bluey306 he had a master (in biblical study if im not mistaken) so he definitely has the skills to write a proper research paper. All he need is just brief understanding on the format of scientific journal, which isnt that hard especially for this type of experiment, and he can wing in the rest of it. With Ollie’s brand of humor thrown inside of it Im sure he can write a 10 pages paper on this ‘research’very easilly

    When things heat up the particles vibrate. The heat of the metal causes the particles to vibrate so quickly they make that screaming sound as the dry ice sublimes. You don't even need something particularly hot. Just warm a coin between your fingers, and press the edge of the coin into the ice for the same effect.

    That's why it's still soft inside is because you're just frying the outside starch again. When you cool down the the fried item, and then fry it again, it prorects the inside and still retains its moisture while getting the outside crispy because of the rapid change of temperature.

      Just like forging armor then, if you heat metal just enough into its phase transition temperature but not enough to melt it to metal puddle then suddenly cool it very rapidly its outer shell will harden while its inside will retain its ductility, making it able to break apart high velocity bullet with its hardened surface then optimally absorb more of its kinetic energy with its more ductile inside.

    one of my favorite guilty pleasure foods is cheapo frozen pizza(red baron brand ftw!). i like it just fine straight out of the oven but sometimes after cooking it and letting it cool, i will re-heat it for 7-10 minutes and it is so much better.

    Okay, the dry ice is screaming because it is touched with warmly heated metal. When it is touched, the dry ice evaporates and it changes the pressure. As more and more gas is created, it pushes through the points where the metal touches the dry ice, creating a pressure drop that draws the metal and dry ice together again. As the metal is pushed up by the evaporated gas and drawn back down by the pressure drop, it will vibrate quickly enough to hear an audible noise.
    --> Thus, metal is crying because they are too cold.

    You'd probably get different results if you waited a bit longer instead of using the dry ice. Chemically more of the potato is converted to starch after you fry them and leave them for a while. This is what makes them taste better (as well as the extra crispiness).

    Dried ice is chilled CO2 which is cooled to become a solid, when you’re applying extreme heat to it(frying basket), it melts the dried ice at a faster than room temperature rate, and with a load on it(weight of the frying basket), you’re basically creating a pocket of air that’s trying to escape the pocket with a weight on it.

    In Belgium, we always fry our fries 2 times. The first fry is shorter and on a lower temperature and the second time is a little longer and on a higher temperature. This is normal for us because it always has been that way. It's a shock for us when they are baked only once, let alone 3 times like Ollie said they do in pubs. It's a funny thing how the same thing is prepared so differently all over the world. Love the video ♥

    I have a cat and 13 bunnies, 4 of them are 3 weeks old and have just opened their eyes about a week ago. Every single one of them looked up and turned their heads every time a potato soul tried to escape the cold. Thank you for this once in a lifetime experience. I needed that.

    The 'crying'is because the sudden heat causes the iceto convert back to solid. But... sine you put the chips on it, it was escaping through the tiny gaps acting like vocal chords almost. Hence the human like screech

    The sound happens because you're basically making a kettle, boiling the dry ice instead of water.
    Why most shops stop at triple cooked? Because the ROI is very much diminishing for fried potato sticks.

    My grandma's chips were the best I've ever tasted , she only used King Edward potatoes , and after peeling and chopping , she patted them dry with a tea towel for what seemed like hours she then blanched them in lard on 140 until they started to soften then she took them out and let them cool and then put them back in at 160 until they started to colour and then she took them out again and let them cool and put them back in at 180 until crisp .
    I have been a chef for some years now , and no matter what I do to replicate those legendary chips I always come up short , maybe that is more to do with my grandma not being there to share them . Miss ya gran .

      Not in a sense where they need an EpiPen. I think it's like if someone who can't eat gluten eats gluten. He will feel sick and bloated and gassy if I remember

    These look amazing. Though, at least where I am, a lot of fries in the US are very thin so I'm not sure they'd even survive double cooking, but next time I get some thicker bois, I'm going to try triple and septuple frying them

    Yum!! The idea of frying chips/fries twice is to create a crisp outer layer with a fluffy inner layer. The best way to do this is to fry in hot oil, cool, then fry in hotter oil. Whether or not you find it delicious 😋 is completely up to seasoning and personal taste
