Ingredients:
14oz (400g) macaroni
1 cup )115g) Cheddar cheese
3/4 cup (85g) Gruyere cheese
3/4 cup (85g) Mozzarella cheese
4 tablespoons (30g) Flour
4 tablespoons (60g) Butter
4 cups (1L) Milk
1 teaspoon Salt
1/4 teaspoon Pepper
1/4 teaspoon Nutmeg
Directions:
1. Preheat oven to 360F (180C).
2. In a large bowl combine all the cheeses and set aside.
3. Heat large pot of salted water, cook the macaroni to al dente (1-2 minutes less then package instructions).
4. While the pasta is cooking make the sauce: In a large pot, melt the butter, add flour and whisk over medium-low heat. Cook for a couple of minutes, whisking constantly. Gradually add the milk and whisk until smooth. Cook until slightly thickens, about 5-6 minutes.
5. Gradually add 3/4 of the cheeses to the sauce and whisk until melted after each addition. Season with salt and pepper and mix. If you want to add more additions like bacon, herbs or spices, now it’s the time.
6. Drain the pasta and add to the sauce.
7. Transfer to a 12-inch (30cm) round baking dish, sprinkle the remaining 1/4 of the cheese and bake for 20-25 minutes or until golden and bubbly.
Notes:
* serve warm
* you can use any type of cheese that you like
* this is pretty basic version of mac & cheese but you can add topping like bacon, herbs and spices.

The Cooking Foodie what kind of milk did you use? 2%? 1%? Whole? Can I use almond or soy?
@@itzeltmolina1069 I used whole milk, but you can use 1% and 2%. I don't recommend to use almond/soy milk, it won't be creamy and reach enough.
Hi, we dont gve gruveye cheese in south east asia, usually in our market we only have cheddar n mozzarella. Can u helo for the alternative or can i skip it? If i skip it, which one shoukd i add more, cheddar or mozarella?

1:20 Important note. When making the roux (butter + flour), wait until the mixture turns lightly brown before adding the milk.

@@ilokeshmithranMy parents usually use all purpose flour for the dish. It works out fine. Hope this helped! :D
Plain flour, and you know when the Roux is good when the aroma is that of freshly baked pastry crust
The first batch of milk or the second?
For those of you who struggled with the amount of milk : Put 1L of milk for every 60g of flour (sorry using metric - European here). This is what we call "béchamel". If you're afraid that it's still too liquid, let it cook over medium heat (while always stirring - after all you wouldn't want your milk to burn) for a few more minutes, the sauce will then thicken.
If the consistency of the béchamel is not to your liking then add in same quantity butter/flour. Stir properly. It will thicken.
The type of butter (salted or unsalted) & flour (self raising or not) doesn't matter. If you do go with unsalted you'd probably wish to add a pinch of salt at the end though.

Ceci n'est pas la Béchamel, l'ami, dont la formule est 1*1*10, soit pour reprendre ton exemple, 60 gr de farine, 60gr de beurre et 600 ml de lait.
Par contre tu as raison de la "fausser" puisque les pâtes vont "boire" la béchamel, même si je trouve que tu as la main un peu lourde avec le lait, moi j'aurais fait 60 / 800
Pour le sel, gaffe, les fromages sont salés, aussi, rectifier seulement à la fin.

hey, i tried this and it was actually really good! the only advice i have for you guys is to probably add more seasoning if you’re thinking about trying it. other than that, go ahead and try it!
Did your Mac and cheese “drown” in the milk or come out liquidy?
@@troydan9842 when i was making it i got worried it might come out liquidy, but it didn’t surprisingly! it was extremely malleable (a little more than usual) but not necessarily liquidy. you should try it! just remember to add more seasoning lol

@@troydan9842 Try adding your milk in more slowly or just keep on “cooking” it until it becomes your desired consistency. she added more milk at once, leading to a thinner bechamel. :)
What a great recipe. I made it today . I used mixed macaroni cheese from supper store. It turned out so yummy! My family loves it!
Found your video quite by accident. Great basic recipe. What I really liked and appreciated was that in post production you listed the ingredients, the amounts on each shot. Rather than looking all over to find the recipe or scribble down as speaking , easy enough to pause and start. While some may not like this production method many new to cooking myself included really appreciate this. Makes the first time so much easier. Thanks

Made this tonight, flipping fantastic!! I will literally never make Kraft dinner ever again. Kids both loved it which is a rarity in my house. Did a home made garlic bread as well.

I usually have PresidentsChoice/SuperStore brand Mac&Cheese, it’s better than KD imo.
My granddaughter's favorite. I made it for lunch today, it was fabulous! The only difference was that I used heavy cream, because I had it on hand and had to use it. Everyone loved, loved, loved it! Will definitely follow you.

I’ve been making my m&c this way for years. The Bechamel sauce with a hint of nutmeg is the secret to the dish. I also however add bread crumbs on top

Just found this recipe, very close to the recipe I use. I've never added in the flour roux before, I also mix in a can of diced green chilis and a cup of diced ham. I will need to try this out using the flour, thanks.
I used 2x as much Cheddar and 2x as much Gruyere cheese than the recipe called for, sprinkled Italian (seasoned) bread crumbs on top before baking and served with sliced sun-dried tomatoes - the family loved it. Thanks for sharing!

I just made this with a few modifications. I used 16 oz of cavatappi pasta. I used Monterey Jack cheese instead of gruyere. And I mixed 1/2 cup of panko into the cheese that was left for the topping. Cooked it at 375 for 25 minutes. Was delicious. 😁 also make sure you shred your own cheese, don't use bagged cheese and makes all the difference.
Hey, a lot of people were saying things like ‘mac and soup’ and that there is too much milk but for me it came out just fine. What i did was when it said to remove the milk, butter and flour mixture off heat (01:32), I did not, i left it on low-medium heat when i added the seasonings and cheese (so it could melt quicker) and it came out really creamy!
It tastes really good so i 100% recommended this recipe with this tip! 😋

it was super good! first recipe i clicked on and it was amazing when i made it. One thing i would say is that it tastes so much better when you add 5 turds of garlic. I added Panko for a little crunch, but i added too much and it turned soggy kinda. I wanted to bake it but i was so starving and i already had a sample of it.

Not very healthy though
I like trying out other peoples recipes, especially simple ones with the ingredients I already have. I would make it 3 or 4 times a year but with a green salad on the side. This recipe turned out to be the best one my family of five chose over others and enjoyed the most. Its way better than mine that's for sure👍😊.

I think this was a really good recipe I thought at first 4 cups of milk was too much but it turned out really good. There wasn’t much flavour so if you do try this recipe add more seasoning. Other than that I think this recipe is worth trying.

If you're having trouble with this recipe and watery lumpy sauce, what no one will tell you is very simple- stop using a spread instead of butter! At the store ask because EVERYTHING claims to be butter and a lot of products are TERRIBLE for making rouxs. If you use, for instance, country crock spread, no matter what you do, the butter and flour will form clumps and be completely useless.
AGAIN, DO NOT USE SPREAD, USE BUTTER! I know it usually doesn't matter for baking, but apparently for cooking it does.
Now, cheddar works just fine, you may wish to adjust the cheese to milk ratio for consistency.

Whipped up this recipe tonight for the fam jam. They loved it! Was a little concerned that the cheese sauce to macaroni ratio was a little off. Everything balanced out once it was done in the oven. Added my own spin to the recipe. Added some bread crumbs on top with some drizzled butter.

This recipe is really good, I think use different cheeses if you want to have a mix of different cheese tastes otherwise you can only just add one type and it'll still taste really good, I made this a few days ago
