I made this today with a few changes. I cut the recipe in 1/2 using 3 eggs. I lightly buttered an 8 inch cast iron pan and baked it in my preheated oven for 30 minutes at 350 degree farenheit. I did not cover the pan. The ingredients are a delightful combination. Delicious and will definitely make this again.😁

Looks delicious, I think I would mix it up in a bowl, then pour it into the pan . I'm a messy cook and it would be all over the stove or counter if I did it that way. I'm glad to know not all cooks are as messy as me.

This looks really good. I think I would mix together and bake in a 9x13 pan. I have to cook in small burst. I think baking it would allow me to rest and not worry if I could flip it. Thank you for sharing your recipe. I never saw a pepper flattened before cutting I will have to give it a try.
