    Thank you for your delightful cooking demos. We eat tons of varieties of mushrooms in Japan. My favorite is the maitake as it is very deeply flavorful. We generally slice and sauté mushrooms in a bit of sake and a whisper of soy sauce (at the end). I like to use a lid to preserve the liquid. My favorite combinations are mushrooms and fresh spinach sauté (may want to blanch spinach and drain before adding to partially cooked mushrooms) and mushrooms with pima (Japanese green peppers). Tender green and red bell peppers might work well, too. We tend to serve these mushroom dishes as accompaniments to rice, but would work with sweet potatoes or white potatoes, or udon noodles. Sometimes we add a half cup of frozen corn kernels to either dish. My favorite family restaurant serves a giant mushroom salad that I adore. The salad has various greens and tomatoes with a warm cooked lemon and onion dressing. There are cubed potatoes that have been browned and are still warm, as well. Across the top of the salad bowl are large sautéed (still warm) sliced mushrooms (portobello sized that are verically sliced, including stems). Japanese cooks use a wide variety of vegetables. I hope this gives readers some additional ideas on using mushrooms and onions.

    I guess I thought you would cook them together and make a dish. But i like them separate too. And you are right about the smell of Onion and Garlic cooking. Its a comforting feel.

    Wow thank you for this recipe demo I have a bunch of onions and I got a bag of rus from my neighbor that I need to cook !’Thanks for sharing I will ever summit vinegar at the end to make my onions and mushrooms taste delicious can’t wait thank you again to your mom and entertain for her recipe lesson on water frying onions and mushrooms they look wonderful so wish we had smell of vision but I got some onions Sliced up and mushrooms in a bag I’m gonna clean off and fry them as well thank you so much for all you do and sharing your recipe enjoy I’m enjoying your books they are the bomb!

    How hot is the pan with the mushrooms? My husband lurks and whines that I am burning his pans if I use high heat!

      Steel and cast iron pans will discolor but don't scrub the patina off. It creates a non stick surface, inside, and spreads the heat, outside... The original non stick. Tell him to look it up and to stop micromanaging.... with love. lol.

    Love these gals! By the way , I use moms idea of balsamic when I make Brussels sprouts. Cut in half, cut side down and add some water. Let them cook awhile then add the vinegar. Turn them and shake the pan. Heat off and cover. Let them steam a bit. When tender remove from pan.

    Today I dry sauteed mushrooms and they were delicious! Thanks to you ladies! Next time I'll add the balsamic vinegar for an extra special twist. Walk away from the pan! It IS tempting to want to mess with them :)

    Love your videos! Been following Dr Essylstyn for years. Please, more simple ‘how to’ techniques cooking in a pan on the stovetop without oil. Examples - Onion/celery/carrot base for lentil, soups etc - Garlic and/or almond green beans. - Browned: zucchini or cauliflower or brussels sprouts. 😋

    Love you guys!! Just wanted to share with you how I cook my onions. I chop them up and then put them in the steamer and then put them in the microwave for 5 mins per onion. When they come out they are nice and juicy and 80% cooked! Then I put them in fry pan and sprinkle generously with smoked paprika, Montreal steak spice, 1 1/2 cap of liquid smoke and 2 tsp of maple sugar(no sugar added). Then I add the too Our Hummus! OMG…..So delicious I sometimes eat it right out of the bowl 🍲!! Thank you sooo much for your recipes and entertainment!! 🥰👍💐

    I have to comment here. Regardless of the amazing recipes & tips here, it's truely painful to watch the eye-rolling, interrupting & discounting whenever your mom speaks. It has been in so many of your videos I've watched. The passive- aggressive interchange is not appealing. I had stopped watching for awhile & just came back due to the quality of your info. But still... off-putting. Cooking with affection gives radiance to your food rather than leaving a bad taste in your mouth.

    Tried this technique for the mushrooms last night... including the aged balsamic vinegar plus some chopped garlic near the end ..and it was spectacular! Will be eating more mushrooms now for sure. I will share his entertaining video with friends who are skeptical of sautéing without oil.

    Brilliant. Thank you for showing us how to 'dry fry' or 'dry saute' onions & mushrooms. Bit nervous about having very hot pan & then putting in onions. Guess the secret is to keep onions moving in skillet so they don't stick. Great !

    Store mushrooms in the fridge in a paper bag if you are not using them right away. It is my experience that they last longer.

    I want to use iron skillet but it requires the pan to be seasoned (oiled) however it isn't a lot of oil as it is only a film. Is it ok?

    I have some non-stick that would ruin if heated too hot, but onions and other food browns just fine on medium-hot as long as I do not add too much water.

      Joan Van Cleave it looks like a nonstick pan. My concern is with all we do to eat clean, how can we use a chemical-based nonstick pan? My understanding is those chemicals are just as toxic or more so than in many foods. Am I missing something?
