Try putting a metal cooling rack on the baking sheet with eggplant rounds on the rack. The hot oven air will circulate each slice and they will come out nice and crispy.

I used to do this a lot, but instead of BBQ sauce I use plain, no-salt-added tomato sauce, sprinkled with nooch, oregano, and garlic powder. It turns out soft, not spongy, but I think I would cook it at 400 for 30 minutes? Also, I didn't turn it over, and it's just seasoned on one side, so a little less work. I haven't done it in a while, but this inspires me to get back to it. Eggplant is one of my favorite veggies, I even add it to my savory oatmeal every morning!
To remove the bitter taste of eggplant (i.e., cause of dislike along with texture), simply salt the slices to draw out the liquid then rinse to remove the salt and pat dry. Season and dry coat thin moistened slices with WW flour and cornstarch and air-fry.
I'm always saying this: I concur on using Asian eggplants (in this case, the long thin purple ones) instead of the European types found usually: thinner skins, less bitterness. Easier for eggplant haters as well.

Several people have faux parmesan recipes. Dr Gregor has one in his How Not to Diet Cookbook that has ground up brazil nuts, nutritional yeast, and spices in it
Not sure, but I think when they say yeast they mean nutritional yeast which is not at all the same as yeast for baking. Do some research but I believe you should be fine
@@SherryEllesson According to the Medical Medium Anthony Williams nutritional yeast has MSG. The specific glutamine acid that's only in it is highly irritating to the intestinal tract lining. It puts stress upon the immune system, is not a helpful food. If you have no health issues whatsoever used sparingly could be an option. I no longer buy it or use it but if it's in a dish when I eat out I'll eat it.

Whomever pays for the study gets the result they asked for. MM says to eat lots of fruits and veggies and lower your fats, can't go wrong with that.

Use a mandolin for thin slices, mix bbq sauce, vinegar and nutritional yeast all together first then use a brush to apply evenly !

I ususally do this but with simple organic tomatoe sauce, some basil and its delicious I called them small pizzas.
