In the meantime, I think I’ll make a version with items I have in the house: 2 ears of corn, zucchini, small sweet red onion, a few chives, some chipotles in adobo. sour cream, Mayo, fresh parsley. I also have little cooked new potatoes, carrots, hard boiled eggs and the parsley…thinking I’ll make a potato salad, too. Or, maybe they would make good hash brown style patties. Pondering 😊

I make something similar: Korean Cheesy Corn w/ Crab. Basically, find you a good cheesy corn recipe, make that, and then add store-made crab dip to it. We serve it hot and I typically add a few chipotle peppers into the dip.

Pampered Chef has a tool that just takes the kernals off the cob with ease. This does sound like a good family get together dip. I will have to give it a try. I dont like Daisy i think it is very watery and thin, so i will use Breakstones sour cream instead. Thanks for the recipe.
When I was a kid we canned food. We had tool with two longer hassles on either side and a small round cutter in the middle. It would cut the corn off in one pass. But that probably doesn't make sense for doing just 2 ears every once in a while.

I made you recipe but doctored it a bit. Instead of diced Poblanos, I used dehydrated powdered poblanos & mild hatch chiles that I dehydrated from my garden and I added Cilantro. It was very yummy. Thank you for sharing.

You're going to see duplicates all the time no matter what you watch but I would urge you to stay because I wouldn't want to see you miss out on the best that's yet to come!
Sounds like a couple of perfect additions. I will at first make the original recipe. Then taste it and go from there. I like to always follow the original recipe before changing it. But I will have fresh cilantro on hand because I love it in everything it seems.

I do not cook any more. the corn. If you use canned corn, make sure you drain it well first. I prefer corn cut off the cob, you do not have to cook it. Also I flame roasted the poblanos, medium size, and used both in this recipe. This dip can be a bit bland, so that's why I used two poblanos. Turned out great.
Your cutting of the corn with the bowls is a great way, but for the health of your blade edge, use a plastic or wooden bowl to cut onto. That poor thing!

If you have a Bundt cake pan, you can put the ear of corn in the hole in the center to hold it still, and then cut the corn off the cob. 🌽

You can, or in the oven under the broiler. Just keep an eye on them so they won’t burn. Don’t forget to turn them over.

Poblano peppers are one of the least hot/spicy. You're very safe.
