If you have a Bundt cake pan, you can put the ear of corn in the hole in the center to hold it still, and then cut the corn off the cob. 🌽

Yum! I’ll make this with your recipe, soon. In the meantime, I think I’ll make a version with items I have in the house: 2 ears of corn, zucchini, small sweet red onion, a few chives, some chipotles in adobo. sour cream, Mayo, fresh parsley.
I also have little cooked new potatoes, carrots, hard boiled eggs and the parsley…thinking I’ll make a potato salad, too. Or, maybe they would make good hash brown style patties. Pondering 😊

I make something similar: Korean Cheesy Corn w/ Crab. Basically, find you a good cheesy corn recipe, make that, and then add store-made crab dip to it. We serve it hot and I typically add a few chipotle peppers into the dip.

When I was a kid we canned food. We had tool with two longer hassles on either side and a small round cutter in the middle. It would cut the corn off in one pass. But that probably doesn't make sense for doing just 2 ears every once in a while.

Also I flame roasted the poblanos, medium size, and used both in this recipe. This dip can be a bit bland, so that's why I used two poblanos. Turned out great.
