I’ve used chorizo before and it’s great, but the varieties available near me were a lot fattier than these sausages so I had to drain off quite a bit of grease.

I watch all of Chef John’s videos. But I have to admit I get more excited about them around Thanksgiving and around the Super Bowl! Always great party food a Super Bowl time!
I might not make everything Chef John presents, but I am watching all his videos because it's a great, motivating cooking course. I'm up to about three hundred and fifty videos. Long way to go yet.

I would just add this comment, that I would recommend using yellow cheddar cheese for this dish. The flavor will be the same, but the white cheese ends up making a funky, unappetizing pink dip the color of raw chicken. Yellow cheese makes the whole thing look more like a queso dip which people invariably can't wait to eat.
My stepmother-in-law always made this at Thanksgiving & Superbowl times, but she cooked and retained it in a crock pot (which I recommend). It was always talked about & raved over every time..ABSOLUTELY DELICIOUS!😋

I wrapped my cream cheese up in my electric blanket for a while, my house is too cold to warm up at "room temperature." Upstate NY problems, amiright John?!?
I have a habit of putting something small, non-liquid, and frozen into a plastic bag and then into the inside pocket of the fleece jacket I wear over my sweater on days like this, huddling near a space heater. (Live several states south of you but in a poorly built, badly insulated, terribly drafty house that I can't afford to upgrade.) It's how I warm up things like breakfast rolls or, yes, cream cheese for recipes.

I’m sorry to hear that, I love dairy products. My daughter-in-law suffers from being Lactose Intolerant... She uses an OTC product called, “Lactaid”, it a Enzyme pill that helps her digest. You take one pill with your first bite of food “Dairy” food. She swears by it. Take care and good luck. 😊

@@id10t98 I'm allergic. There are vegan alternatives to all the milk products in this. I will admit that the cheddar alternatives aren't as good as the rest, so I'd use the "Mexican mix" alternative instead.
There is one brand I can't stand, but it's everywhere so maybe it's just me.

The question is, will he ever do another “chip” recipe?
I grew up with Cowboy Cookies, which were cookies with basically all the cookie fixin’s in them- walnuts, peanuts, macadamia nuts, chocolate chips, white chocolate chips,coconut, m&ms, raisins, dried cranberries, etc. I’ve always presumed the cowboy in recipe names were just another way of saying stone soup, everything but the kitchen sink, whatever’s in the fridge, etc. I think I like your explanation better.

A good way to soften the cream cheese if you forgot to leave it out to become room temperature is to take it out of the package & put it in a microwaveable safe bowl then microwave it for like 10 seconds & then mix it. If it’s still too hard after that, add a couple more seconds but don’t over do it cause it can melt (quickly) if you’re not careful 😊
I always keep it sealed and place in a bowl with luke warm water, change the water out if needed, but usually soft by the time the other ingredients are prepped.
Chef John for what it’s worth, both my parents passed within the last 2 years, but I find an immense amount of comfort watching your videos, the dad jokes are folded under a great guide to make phenomenal food, cheers my friend!

This may be the world’s most perfect food..... it’s got all the food groups- meat, dairy, veggies, grains (chips)..... and I bet it’s low carb if you just eat it with a spoon! 😊😊😊

every single time i see a dip recipe from chef john, im constantly reminded to get myself a freaking kitchen blowtorch. god i love the top bubbly caramely layer so much, id just toss some extra shredded cheese and blowtorch the top just to relive it layer after layer again

* There is a masher that has 5 blades & is made of silicone & won't harm your pan & divides quickly while cooking.

I think you’re right about the origin of the name. Corn, black beans and jalapeños are the staples in any “cowboy” recipe.
Ngl, I was expecting "You are the Bryant Gumbel of your sausage crumble."
Italian flavor profile aside, this looks like a stellar country comfort recipe and I can't wait to give it a shot, albeit with a more appropriate sausage substitute (e.g. Jimmy Dean, etc.). Keep 'em coming, chef John!

I tried a version of this without the corn and the cheddar when I lived in Texas, and as I made it over the years I ended up adding grated cheese and scallions. Never knew the name of the recipe though.

Any time I attend a potluck, I’ve been bringing CJ’s buffalo chicken dip, which is always the star attraction. I mean people go crazy for it. I’m tempted to make this next time but the buffalo dip is just so, so good.

There's plenty of plant-based meat replacement products these days, including some that start from a "raw" state, like the *Impossible* line. Check the meat dept. in pretty much any supermarket. Pretty sure you can even get them in link sausage form. If you can only find plain ground, it shouldn't be too hard to find a recipe for the type of sausage you'd like to emulate for a seasoning blend.
One other option I enjoy is seitan. Homemade seitan sausage can be seasoned to taste and turned into crumbles in a food processor.

I just went in the way back machine and made chef John's sloppy joes from the website. It must be 10+ yr old video. Good lordy is it delicious. Highly recommend. Now on to cowboy crack🤤
John true story. I've been adding TJ's cowboy caviar to cream cheese, cheddar cheese, and beef chorizo and heating through in my crock pot. It's a fan favorite round here and I get asked to make it all the time.

I made this for Super Bowl Sunday. I was delicious and a huge hit at our Super Bowl party! I had about half left over so I brought it into work the next day and it was gone by the end of the day! Great recipe, easy to make and a real crowd pleaser. Thanks for sharing Chef John.

I didn't know this even had a real name. It's always been "The Dip" in my house, except we layer it and bake instead of mixing it together. Half the time we change out the sausage for cooked taco seasoned chicken.

I make a smoked salmon ( we fish for salmon every year) dip a similar way, there are never any left overs. I will try it with sausage.

I could see this as a variation on Texas Caviar, which is a similar recipe. Might be interesting to add a can of well-drained black-eyed peas. Looks awesome!

I need a Cincinnati themed dip for the super bowl. There is a "skyline" dip that is cream cheese layered with Cincinnati chili and cheddar but that needs some chef john magic to make it better or maybe make something completely new please.

i'm not in US so super bowl isn't a big a thing here (UK), but agree and i'm in similar situation. a great many of chef johns recipes are "just the right recipe, at the time" but all the time. .. lot's of good food, and not enough belly :'(

This dip would be FANTASTIC with pasta.
Chef John, I am a huge fan of yours. However, this particular recipe was a major letdown. I thought this would be great for a Halloween party or something like that, and was anxious to see what time/temperature you used for baking the cowboy. Turns out there was no cowboy in the recipe at all! I know it would have been a bit gruesome, but might lend a little fun to a Halloween party or an Addams Family marathon.
The 'rotel dip' I used to have seems more like a cross between the traditional and this. After the mention of Cowboy Caviar, I couldn't help but think this could use some black beans and red onion mixed in and some fresh sliced avocado on top.
This might be a great recipe for when a superb owl comes to visit.

I have a recipe just like this one with the only difference of using a cup of pace picante sauce instead of fire roasted tomatoes. I'll try it Chef John's way next time.
edit: Oh and we call it MexiCali dip. Probably because I live in California and it has picante sauce, would be my guess. After all, you are the Tragically Hip of your MexiCali dip. ...or Cowboy dip.

Dude...I'm 6ft....used to weigh 175-180....than Pandemic hit....was forced to learn to cook...used you as a go-to for my new and exciting hobby of the culinary arts....tried these awesome exotic recipes....and I "LARDED UP"--- THATS RIGHT...
